Strawberry | 2021 Harvest
Spontaneous
Strawberry | 2021 Harvest is a blend of three casks of traditionally brewed spontaneously fermented beer brewed across two seasons. In late May of 2021, we picked up nearly a ton of New Jersey grown strawberries. We picked the stems off the fruit; hand-crushed them and added it directly into tank for a week of contact time before racking back to oak for refermentation. After maturation, we bottled this beer in March 2022 to condition. Strawberry | 2021 Harvest pours a blush pink with aromatics of fresh strawberry preserves, stone fruit and full supporting minerality.

Grisaille | Blend Nº2
Saison
Grisaille | Blend N°2 is our interpretation of a Grisette, a refreshing, low-alcohol beer originally brewed in Belgium and enjoyed by coal miners after a long day of work. Grisaille | Blend N°2 is brewed with a blend of pilsner malt, chitted barley, malted wheat and malted oats from Rabbit Hill Malthouse. We hopped this beer with aged and fresh noble hops before fermenting it in oak with our favorite saison yeast and our local flora. After aging for several months in oak, we blended in a small portion of well-aged spontaneously fermented beer. The mingling of the saison and spontaneously fermented beer through the process of bottle conditioning provides a remarkably complex beer to drink fresh or continue aging. Grisaille | Blend N°2 pours a pale golden yellow and pushes notes of fresh hay, stone fruit, and bright lemon with a soft bitterness and lively carbonation to create a crisp and refreshing finish.

Cherry | 2020 Harvest
Spontaneous
Cherry | 2020 Harvest comes from a blend of two batches across the Spring and Fall of 2019. Approximately 45% of the blend came from a 16-month-old traditionally brewed spontaneous beer brewed with an elevated hopping rate while the balance of the blend came from 7-month-old traditional spontaneous beer with the addition of New Jersey blueberry blossom honey in the coolship. For Cherry | 2020 Harvest, we pulled this blend with an average age of 11 months for fruiting. We then added a very large amount of New Jersey grown and harvested Montmorency cherries directly to oak barrels with the beer where it rested for an additional 12 months to integrate all aspects of the cherry from the juice, skin and pits. We bottled this blend in June of 2021 and it will have conditioned for over 12 months prior to release. Cherry 2020 Harvest will have an average age of 35 months. Cherry | 2020 Harvest pours with a beautiful blush red with big cherry pie aromatics supported by almond and nuttiness while the flavor brings juicy and jammy stonefruit, a light funk and a very balanced acidity.

TWO
Spontaneous
Two, inspired by Belgian Lambic blending tradition, is our first blend to incorporate multiple years of our spontaneous program in one bottle. Considered a two year blend because the oldest component is over 24 months, Two is comprised of three different barrels from the 2018 and 2019 spontaneous seasons. At the time of bottling the average age of the blend was 20 months. The oldest component of Two was 26 months at the time of blending. This barrel was pulled from the first traditional batch we brewed in Spring 2018. Upon blending, the barrel brought a rounded, delicate profile with aged cellar aromatics from its extended aging that provides a base for the younger components to layer in fruitier top notes. The second component of the blend was 19 months at the time of bottling, the fourth batch of Fall 2018. This spontaneous beer was brewed with the addition of New Jersey harvested blueberry blossom honey. It brings floral and lemony citrus highlights. The final component was 16 months at the time of bottling, pulled from our fourth batch of Spring 2019. In this recipe, we increase the raw wheat percentage to 50%, with the remainder being malted barley. We also raised the hopping rate to increase the aging potential of the blend, lending a refreshing grapefruit pith flavor. The first blend of Two has aromas of apricot, peach and grapefruit along with Brettanomyces derived cellar character and a citrus flavor from our aged hops. It presents a depth in acid profile balanced by cream and caramel flavors from our all NJ grains and brewing process. At the time of release, the beer in the bottle had an average age of 30 months and should age well for years to come.

Elderflower | 2021 Harvest
Spontaneous
Elderflower | 2021 Harvest is a blend of traditionally brewed spontaneously fermented beers across three brewing seasons, including a portion from a recipe using a higher hopping rate. In late May of 2021, our team harvested European elderflower from a local New Jersey farm, then let the elderflower soak cold in the beer for a single night before being racked back to oak for extended conditioning. At the time of bottling, this blend had an average age of 33 months and has been conditioning since its bottling in early 2022. Elderflower | 2021 Harvest pours a vibrant yellow with a rocky white foam. It pushes vibrant floral aromatics and notes of sweet lychee and apricots. The acidity is light and elevates a clean lemon tart flavor profile.

Yellow Peach | 2021 Harvest
Spontaneous
Yellow Peach | 2021 Harvest is a complex blend pulling from high gravity, honey and traditionally brewed spontaneously fermented beers across three brewing seasons. In July 2021, our team picked up the year's yellow peach harvest and, at the peak of ripeness, hand-crushed the fruit and added it directly to the oak for extended refermentation at a rate of nearly 8 lbs per gallon. The blend was then racked on top of the fruit and allowed to referment with full contact of the peaches as well as their skins and pits for added complexity in the final beer. At the time of bottling, this blend had an average age of 26 months and has been conditioning since its bottling in early 2022. Peach | 2021 Harvest pours a peachy yellow color with a creamy white foam with aromatics of peach cobbler and plush mouthfeel all supported by a light acidity and high minerality.
