Apiary | Blend Nº1
Saison
Apiary was brewed with New Jersey grown and malted barley and buckwheat with the addition of New Jersey blueberry blossom honey. We used a traditional step mash to drive a crisp, dry profile, balanced by the bittering addition of aged whole leaf noble hops. Apiary presents with a honeycomb aroma balanced by a dry fermentation and high effervescence. The extended conditioning time pushes aromatics of hay and light funk, grapefruit, spice, toasted brioche and honey.

Blackberry & Blueberry | 2020 Harvest
Spontaneous
For the first release of this fruiting combination, we chose a blend across four different batches brewed in the Spring and Fall seasons of 2019. Approximately 20% of this blend consisted of an experimental batch that we brewed in Spring of 2019 where we replaced the unmalted wheat portion of the grist with unmalted buckwheat. The remaining portion of the blend was traditionally brewed spontaneous beer, a portion of which was aged in a chestnut puncheon. We pulled the blend at an average age of 13 months for fruiting in the summer of 2020. We separately refermented the beer on New Jersey harvested blackberries and blueberries and then conditioned for an additional 10 months in oak. Blackberry & Blueberry | 2020 Harvest pours a burnt purple, pushing aromatics of blackberry ice cream and blueberry wine along with deep flavor notes of raspberry jam, red wine and bramble. It pours with spritely carbonation and drinks with a balanced wine-like malolactic acidity.

In August 2020, we went to one of our favorite farms in Southern New Jersey to pick up that year’s harvest of locally grown blackberries to add to a carefully selected blend of our spontaneous beers. For this blend, we selected from barrels containing one and two year traditionally crafted spontaneous beer with a particularly low acidic profile to compliment the qualities of those specific berries. The blend soaked on the blackberries at a nearly 50% fruiting rate for two weeks before being transferred back to oak for six months of conditioning. After bottling, Blackberry | 2020 Harvest spent over two years conditioning to bring the fruit and base beer into perfect harmony. The average age of Blackberry | 2020 Harvest is nearly 45 months at release. Blackberry | 2020 Harvest pours a deep purple with burnt orange highlights and a purply white foam. Aromatics of fresh baked blackberry crumble and berry preserves with notes of vanilla and citrus are all reminiscent of these late summer berries.

Blueberry | 2020 Harvest

In July of 2020, we picked up a massive harvest of New Jersey blueberries from one of our favorite farms. Our team matched those berries with a blend across two years of spontaneously fermented beer, a portion of which was brewed with buckwheat in place of the traditional wheat usage. The beer was racked onto the blueberries and allowed to soak cold to extract all of their fresh berry flavors while limiting their tannic extraction. The beer was then racked off the fruit and back into oak for further conditioning for an additional 10 months. After bottling, Blueberry | 2020 Harvest spent two years conditioning in bottle to allow the fruit and blend to develop gracefully. The average age of Blueberry | 2020 Harvest is 49 months at release. Blueberry | 2020 Harvest pours a purplish pink with a pretty off-white foam. Aromatics of jammy blueberry pie, fresh citrus and peach with a structured mouthfeel and a balancing vinous character.

Cherry & Strawberry | 2020 Harvest

In June 2020, we traveled down to our favorite New Jersey strawberry farmer to pick up some overripe and incredibly aromatic strawberries. For this blend, our team selected a blend of two casks with an average age of 13 months to showcase the bright strawberry aromatics. After hand crushing the strawberries, we opt for a short contact time to extract the aromatic juices of the strawberries. We then took a portion of this beer and racked it onto the 2020 harvest of New Jersey Montmorency cherries. The beer then conditioned on the whole cherries in oak casks for an additional 6 months prior to bottling. Cherry & Strawberry | 2020 harvest spent an additional 2 years in bottle to allow for additional flavor development. The total average age of Cherry & Strawberry | 2020 Harvest is over 3.5 years at release. Cherry & Strawberry | 2020 Harvest pours a beautiful deep red color with immediate aromatics of fresh strawberries and pie cherries. The top-note perfumy aromatics of strawberries are intermingled with the deeper baking spice, cinnamon and sweet pie notes.

Cherry | 2020 Harvest

Cherry | 2020 comes from a blend of two batches across the Spring and Fall of 2019. Approximately 45% of the blend came from a 16-month-old traditionally brewed spontaneous beer brewed with an elevated hopping rate while the balance of the blend came from 7-month-old traditional spontaneous beer with the addition of New Jersey blueberry blossom honey in the coolship. For Cherry 2020 Harvest, we pulled this blend with an average age of 11 months for fruiting. We then added a very large amount of New Jersey grown and harvested montmorency cherries directly to oak barrels with the beer where it rested for an additional 12 months to integrate all aspects of the cherry from the juice, skin and pits. We bottled this blend in June of 2021 and it will have conditioned for over 12 months prior to release. Cherry 2020 Harvest will have an average age of 35 months. Cherry 2020 Harvest pours with a beautiful blush red with big cherry pie aromatics supported by almond and nuttiness while the flavor brings juicy and jammy stonefruit, a light funk and a very balanced acidity.

Dry Hopped Markt | Blend N°1
Saison
Dry Hopped Markt is a blend of hoppy saison brewed with pilsner and wheat. It was aged for a year in oak before being blended, dry hopped and bottled. It was dry hopped with Amarillo and Waimea hops at a rate of 3 lbs / BBL. The interplay of the dry hop and the mixed culture brings forward notes of key lime, grapefruit aromatics, a balancing acidity and oaky vanilla undertones.

Blended from a single barrel of traditional spontaneously fermented beer brewed in the Fall of 2018, aged in a cognac cask. Peach Dry Hop presents an intertwining profile of floral peach aromatics, a powdery Amarillo hop punch and a light but refreshing acidity.

From a single barrel of traditional spontaneously fermented beer brewed in December 2018, with the addition of blueberry blossom honey in the coolship. The yellow plums show a golden hue with full, bright aromatics of pineapple upside-down cake, juicy plum flavors and a depth of stone fruit supported by a subtle, light honey character from our spontaneously fermented beer.

Elderflower | 2020 Harvest

In early May 2020, our team traveled to one of our favorite small farms in New Jersey to hand-pick the year's elderflower harvest. Our team carefully selected a blend of some of our favorite mature barrels with an average age of 19 months at the time. We cold macerate the freshly harvested flowers in our traditionally made spontaneously fermented beer for a single night to retain only the most elegant floral aromatics. The beer was then racked back to oak for further conditioning for an additional 6 months prior to bottling. After bottling, Elderflower | 2020 Harvest spent over two years conditioning and rounding out to perfection. The total average age of Elderflower | 2020 Harvest is nearly 4.5 years. Elderflower | 2020 Harvest pours a brilliant golden color with incredibly creamy and well-integrated carbonation. The aromatics immediately burst with a beautiful green apple and fresh spring flowers, while the base beer brings well-rounded acidity balanced by flavors of apricots and pomelo.

Golden Raspberry | 2020 Harvest

Golden Raspberries have been one of our favorite fruits to work with. For this release, we chose a blend pulling from two oak barrels brewed in the Spring and Fall of 2019. The majority of this blend came from a batch brewed with New Jersey harvest blueberry blossom honey which was complemented by a small portion of beer from our aging recipe. For Golden Raspberry | 2020 Harvest, we pulled the blend at an average age of 14 months and racked it onto a blend of New Jersey and Vermont harvested Anne Golden Raspberries. It sat on these raspberries to referment and condition for an additional 8 months. We packaged this harvest of Golden Raspberry in May of 2021, and it will have conditioned for just over 12 months prior to release. Golden Raspberry | 2020 Harvest will have an average age of 34 months. Golden Raspberry | 2020 Harvest pours a light gold with bright raspberry aromatics coupled with apricot, peach, pomelo and taste of mango, sauvignon blanc and fresh apples. It pours with lively carbonation and drinks with a balanced acidity.

Grisaille | Blend Nº1
Saison
A mixed culture Grisette brewed with pilsner, wheat and oats, and hopped with whole leaf UK East Kent Goldings. We use a traditional step mash for dry, crisp profile balanced by the aged hops in an extended boil. Grisaille pours a bright straw hue with a rocky white head pushing aromatics of vanilla, lemongrass and honeysuckle. Grisaille carries oak driven flavors of vanilla and coconut that play off the fruitier Brettanomyces derived pineapple and citrus flavors.

Grüner Veltliner | 2020 Harvest

In preparation for the New Jersey wine grape harvest in September 2020, we blended two different batches of our spontaneous base. The first component was from a portion of mature spontaneous beer brewed with buckwheat in place of wheat. The second component was from a traditional batch aged in a Moscatel cask. Freshly pressed juice from New Jersey grown Austrian white wine varietal was added to our spontaneous blend and allowed to referment in oak twelve months before racking it out of oak for bottling. This marked our first use of the elegant Grüner Veltliner grape. At release the average age of Grüner Veltliner | 2020 Harvest is 37 months. Grüner Veltliner | 2020 Harvest pours like a sparkling white wine with high carbonation that pushes a rocky white foam head. Aromatics of fresh cut grass, citron, yuzu and fresh baked brioche from extended bottle conditioning compliment the dry finish.

Heirloom | Blend N°1
Saison
Heirloom is brewed with New Jersey grown and malted Pilsner, chit malt and malted wheat, bittered with aged hops, then we added fresh Styrian Goldings throughout the kettle. Open fermented with our mixed saison culture before being racked to oak. Heirloom is blended and given a light dry hopping with EKG. The dry hopping provides additional structure to the mouthfeel and some hay-like aromatics that evolve over time with Brettanomyces in the bottle. Drinks with a light body, acidity, and refreshing high carbonation.

Merlot | 2020 Harvest
Spontaneous
During the 2020 harvest, we had the chance to receive New Jersey grown Merlot grapes from our friends at Bellview Winery. The grapes were allowed to undergo carbonic maceration before having a single barrel of mature spontaneously fermented beer racked on the grapes. For the base beer, we chose a barrel from the Spring of 2019 that used a special recipe consisting of New Jersey malted barley and unmalted buckwheat from Rabbit Hill. The beer was allowed to referment on the grapes with 20 days of skin contact before being racked back to oak for extended aging and conditioning for an additional 10 months to mellow. We bottled this blend in August of 2021 and have conditioned it for 15 months prior to release. Merlot | 2020 Harvest will have 46 months of age upon release. Merlot | 2020 Harvest pours a deep maroon with beautiful clarity and a burgundy foam that lasts. The beer presents aromatics of blackberry jam, fresh pressed black cherry juice and pleasant cellar floor with flavors of juicy red fruit, light white pepper all supported by pleasing tannins and well-integrated acidity.

One: Sangiovese Foudre

One: Sangiovese Foudre comes from a single foudre with a past life aging Sangiovese wine. This batch boasted an exceptionally balanced profile out of the foudre, making it perfect for an unblended release. The 2019 spontaneous batch from which this beer comes was aged for 17 months in oak. We allowed the initial blend of One bottles to undergo a conditioning period of 9 months. One: Sangiovese Foudre unfolds with a prominent mineral character, featuring aromatics of lemon sherbet and apricots, complemented by a refreshingly balanced acidity. Notes of ruby red grapefruit, peaches and a hint of red wine are brought together by a supporting malt profile.

Peach & Grüner Veltliner | 2020 Harvest

In September 2020 we received our first pressing of some New Jersey grown and harvested Grüner Veltliner juice. In preparation for the blend, our team chose a barrel of mature 2-year-old buckwheat spontaneously fermented beer and a younger traditionally brewed spontaneously fermented beer. After marrying the juice with our spontaneously fermented beer, we allowed the blend to referment and mature in oak with the addition of that year's New Jersey yellow peach harvest for an additional year. Peach & Grüner Veltliner was then bottled and conditioned for a year and a half prior to release. The total average age of Peach & Grüner Veltliner 2020 Harvest is just over 3 years at release. Peach & Grüner Veltliner | 2020 Harvest pours a light peach color and is brimming with fresh, juicy peach aromatics. The Grüner Veltliner shows through in the lean, crisp body of the beer that is enhanced with a sparkling high carbonation lending notes of fresh sliced apples, honey, and ginger.

Peach & Nectarine | 2020 Harvest

Peach & Nectarine | 2020 Harvest is a blend across three brewing seasons with the oldest component brewed in the Fall of 2018. In 2020, we received a beautiful harvest of New Jersey grown peaches and nectarines. We took our base blend with an average age of 15 months and refermented it on over 6.5 lbs per gallon of yellow peaches and 3 lbs per gallon of yellow and white nectarines before aging it in cask for an additional 5 months prior to packaging. We then laid the beer down in bottle for an additional 11 months of conditioning. Upon release, Peach & Nectarine | 2020 Harvest will be 31 months old. Peach & Nectarine | 2020 Harvest pours a pale yellow with juicy aromatics of ripe peaches along with floral top notes, flavors of grapefruit, a touch of noyaux and a pleasantly balanced acidity.

Peach & Noyaux | 2020 Harvest

Peach & Noyaux | 2020 Harvest was pulled from several batches across the 18|19 and 19|20 brewing seasons. The blend had an average age of eight months for fruiting. 90% of this blend originated from a turbid mashed spontaneous beer brewed with only barley and the addition of both aged and fresh hops. The remaining portion of this blend came from traditionally brewed spontaneous beers. For fruiting we received 1,100lbs of New Jersey grown yellow Clingstone peaches which had the pits separated and were hand-crushed at peak ripeness. We then lightly cracked the peach pits and added them to the blend with the fruit. The beer was allowed to referment and condition on the fruit for an additional year in oak. We bottled this blend in August of 2021 and it will have conditioned for 12 months prior to release. Peach & Noyaux | 2020 Harvest will have an average age of 32 months upon release. Peach & Noyaux pours a bright yellow with aromatics of juicy peach flesh, vanilla and marzipan.

Pinot Noir & Chardonnay | 2020 Harvest

In September 2020, we drove to Northern New Jersey to pick up freshly harvested whole clusters of Pinot Noir and Chardonnay grapes from one of our favorite local grape growers. To complement these grapes we selected a blend of two unique barrels, comprising of a two year old component brewed with buckwheat and an eight month old component brewed with spelt. We hand crushed and destemmed the grape clusters before adding them directly to oak. The spontaneous blend was then racked on top and allowed extensive contact time with the grapes and the skins. After a year it was racked to stainless for bottling. The average age of Pinot Noir & Chardonnay | 2020 Harvest is nearly 46 months at release. Pinot Noir Chardonnay | 2020 Harvest pours with a pink hue and white rocky foam head. It has aromatics of strawberries, cranberries, tree-ripened bosc pears, apricots and a firm minerality and pleasantly earthy notes.

Raspberry | 2019 Harvest

Raspberry | 2019 Harvest is a blend of two threads of spontaneously fermented beers brewed in the Fall of 2018, which were aged on New Jersey grown red raspberries. The dominant component of the blend was a nine-month-old spontaneous beer brewed to a higher gravity, leaving residual body to balance the acidity of the fruit. The beer conditioned on the raspberries in oak for five months prior to bottling. We then laid the blend down in bottle for an additional 15 months prior to release. Upon release, Raspberry | 2019 Harvest will be 28 months old. Raspberries generally are naturally one of the most acidic fruits we work with. We aim to balance the blend with a special higher gravity spontaneous beer recipe that follows a traditional process in all other aspects. The residual sweetness and body bring balance to the fruit, shifting the profile to raspberry jam while the intense stone fruit aromatics and minerality of our base beer can still be found. The raspberries provide a strong red color that carries through to the foam. The aroma is of bright raspberries and vanilla with an underlying fruity and earthy profile from our spontaneously fermented beer.

Red Currant | 2020 Harvest

In July of 2020, our team made the trip to northern New Jersey to select some beautiful Red Currants. These red currants had a uniquely citric, bright and tannic profile that brings a unique balance to our blends of spontaneously fermented beers. For this harvest, our team chose a blend of one- and two-year old traditionally brewed spontaneous beers. We added the red currants directly to the oak barrels and aged the beer on the ribes for an additional year before packaging. After bottling, Red Currant | 2020 Harvest spent an additional 22 months conditioning in bottle. The average age of Red Currant | 2020 Harvest is 48 months at release. Red Currant | 2020 Harvest pours a bright orange color with a dense white foam and aromatics of orange citrus, and cranberries.

Rhubarb & Grüner Veltliner | 2020 Harvest

When we received our first pressing of New Jersey Grown and harvested Grüner Veltliner, we set aside a portion of the blend to then referment and age on freshly harvested rhubarb. For the base of this blend, our team utilized a blend of a 2-year-old buckwheat spontaneous beer along with a small portion of young spontaneous beer. The blend refermented for an additional eight months through the winter of 20|21 before receiving freshly harvest rhubarb from a century old rhubarb patch. The beer was allowed to soak on the rhubarb for an additional five months prior to packaging. The average age of Rhubarb & Grüner Veltliner | 2020 Harvest is 37 months at release. Rhubarb & Grüner Veltliner | 2020 Harvest pours a deep golden color with a firm white foam. Aromatics of strawberry rhubarb pie along with fresh cut green apples and honey.

Second | Anniversary Blend

Our Second Anniversary release is something we have been building towards since we started Field & Oak in early 2018. From the beginning, Field & Oak has drawn its inspiration from traditional Lambic brewing and blending techniques. For our Second Anniversary release we took inspiration from traditional Gueuze production. Our Second Anniversary is a blend of one, two and three year spontaneous beers and our first release of a three year blend. During the Summer of 2021, we tasted through our barrel cellar to select the best barrels from each of the past three seasons. Second pours a burnt orange color with a rocky white head and beautifully effervescent carbonation. Aromatics of grapefruit zest, bright lemon and citrus are supported by an underlying floral profile with well-integrated wood tannins that highlight a slightly acidic finish.
