Shiro Plum | 2021 Harvest is a blend of traditionally brewed spontaneously fermented beers from two batches from the 2018 brewing season; one batch containing New Jersey blueberry blossom honey, and another aged in a chestnut puncheon.
In August of 2021, our team picked up that year's New Jersey Shiro plum harvest. We added them whole, directly through the head of a barrel at a rate of over 8 lbs per gallon along with the blend for refermentation.
At the time of bottling, this blend had an average age of 30 months and has been conditioning since its bottling in early 2022.
Shiro Plum | 2021 Harvest pours bright yellow with orange highlights and a densely creamy foam with aromatics of plums and apricots. A firm but pleasant acidity supports the nuances of plum skins, pineapple upside-down cake and a touch of fermentation funk.
