Strawberry & Elderflower | 2022 Harvest

Strawberry & Elderflower | 2022 Harvest is a blend of traditionally brewed spontaneously fermented beers across two brewing seasons, with the oldest portion brewed in the Spring of 2019. In early June, our team went out to one of our favorite Central Jersey farms to hand-harvest elderflower before destemming it and soaking it cold overnight in the blend. This portion of the blend was then laid down in cask to mellow. Just after harvesting elderflower, we received our harvest of overripe New Jersey strawberries that were hand-crushed and added directly to the same blend at a rate of 8 lbs per gallon. Just prior to bottling, our team tasted through the barrels and created a blend of equal parts strawberry spontaneous and elderflower spontaneous to highlight the complexity of the two harvests. At bottling, this blend had an average age of 48 months and has been conditioning since its bottling in 2023.
