Port Omna Irish Candy 8.1% ABV variant recipe is brewed with a range of English crystal, chocolate, and roast malts with additional flaked oats and flaked barley added to the grist for extra body. After fermentation, this beer was then conditioned on cinnamon, vanilla and cocobut. This beer pours a dark black color with dark mocha colored head and presents a pleasantly rich aromatic and flavor profile featuring all of the sweet cinnamon and coconut notes of the sweet treat that inspired this beer, complete with a frothy and soft mouthfeel with low bitterness and soft finish.

Port Omna Shamrock Shake is our second Port Omna variant, aged on fresh vanilla and peppermint. This 8.1% ABV variant recipe is brewed with a range of English crystal, chocolate, and roast malts with additional flaked oats and flaked barley added to the grist for extra body. After fermentation, this beer was conditioned on fresh vanilla beans sourced from Madagascar and Tanzania before then being conditioned further on a small amount of sifted peppermint for a short period of time. The resulting beer pours a dark black mocha color with a balanced sweet chocolate and mint flavor and aroma featuring notes of chocolate cookie crust, subtle chocolate peppermint patty, and a touch of marshmallow vanilla sweetness combining on top of a frothy and soft textured mouthfeel reminiscent of the namesake.

Port Omna Triple Coconut

Port Omna Triple Coconut is the first of this year’s three Port Omna variants. This 8.1% ABV variant recipe is brewed with a range of English crystal, chocolate, and roast malts with additional flaked oats and flaked barley added to the grist for extra body. After fermentation, this beer was then conditioned on shredded coconut freshly toasted in house and immediately added to the beer at a rate equal to roughly three times our normal rate resulting in a delightful sweet character. This beer pours a dark black color with dark mocha colored head and presents a pleasantly rich aromatic and flavor profile featuring robust notes of toasted coconut macaroon with light milk chocolate ganache combining on top of a frothy and soft mouthfeel with low bitterness and soft finish.

Purple Mountains is hopped throughout the hot side with Calista and Hallertau Blanc before getting a big dry hop of more Hallertau Blanc, Calista, and Nelson Sauvin. The use of newer German hops combined with one of our favorite New Zealand hops creates unique layers of hop flavors including soft melon and orange sherbet intertwined with smooth wine grape and berry notes.

Quadruple Chocolate A Night To End All Dawns – (2023)
Bourbon Barrel-Aged Imperial Stout
12.2% ABV
A select blend of A Night To End All Dawns barrels including Widow Jane George Dickel 12-Year, Woodford Reserve Double Oak, and Elijah Craig Bourbon barrels with an average age of 20 months. This portion of the blend was then further conditioned on a selection of cacao varieties from Ghana, Haiti, Uganda, and the Dominican Republic at our highest rate. Quadruple Chocolate pours a dark mocha color and displays a multitude of rich and decadent bourbon and chocolate notes including chocolate sponge cake, fudge, and mousse creating a heavy chocolate complexity in a full, balanced approach.

Raspberry & Cherry | 2021 Harvest
Spontaneous
Raspberry & Cherry | 2021 Harvest was pulled from a single barrel of traditionally brewed spontaneously fermented beer from the 2020 brewing season. In early July 2021, we received a fresh harvest of Montmorency Cherries and added these directly to oak with the beer at a rate of over 4 lbs per gallon. Soon after, we received our harvest of New Jersey Red Raspberries and added them directly to the same barrels at a rate of over 1.5 lbs per gallon. At bottling, this blend had an average age of 17 months and has been conditioning since its bottling in 2022. Raspberry & Cherry | 2021 Harvest pours an ambered red with an off-white pink foam, and pushes aromatics of sweet red fruits, raspberry jam and underlying cherry pie filling. Flavors of cinnamon and a particularly jammy cherry profile balance a firm raspberry acidity and fruit tannins.

Raspberry | 2019 Harvest
Spontaneous
Raspberry | 2019 Harvest is a blend of two threads of spontaneously fermented beers brewed in the Fall of 2018, which were aged on New Jersey grown red raspberries. The dominant component of the blend was a nine-month-old spontaneous beer brewed to a higher gravity, leaving residual body to balance the acidity of the fruit. The beer conditioned on the raspberries in oak for five months prior to bottling. We then laid the blend down in bottle for an additional 15 months prior to release. Upon release, Raspberry | 2019 Harvest will be 28 months old. Raspberries generally are naturally one of the most acidic fruits we work with. We aim to balance the blend with a special higher gravity spontaneous beer recipe that follows a traditional process in all other aspects. The residual sweetness and body bring balance to the fruit, shifting the profile to raspberry jam while the intense stone fruit aromatics and minerality of our base beer can still be found. The raspberries provide a strong red color that carries through to the foam. The aroma is of bright raspberries and vanilla with an underlying fruity and earthy profile from our spontaneously fermented beer.

Red Currant | 2020 Harvest

In July of 2020, our team made the trip to northern New Jersey to select some beautiful Red Currants. These red currants had a uniquely citric, bright and tannic profile that brings a unique balance to our blends of spontaneously fermented beers. For this harvest, our team chose a blend of one- and two-year old traditionally brewed spontaneous beers. We added the red currants directly to the oak barrels and aged the beer on the ribes for an additional year before packaging. After bottling, Red Currant | 2020 Harvest spent an additional 22 months conditioning in bottle. The average age of Red Currant | 2020 Harvest is 48 months at release. Red Currant | 2020 Harvest pours a bright orange color with a dense white foam and aromatics of orange citrus, and cranberries.

Reef? There's A Reef?
India Pale Ale

Reef? There's A Reef?, our 7.0% IPA, features Amarillo hops in the whirlpool and was dry-hopped with an extra heavy blend of Citra, Amarillo, HBC 586 and Bravo. We added HBC 586 and a small amount of Bravo to the dry-hop to punch up the sweet fruit and mango flavors. Reef? There's a Reef? pours an opaque pale orange with aromatics of orange marmalade, mangos and fresh orange citrus.

Retractable Skeg, our 8.0% Imperial IPA, is hopped in the whirlpool with Idaho 7 and Mosaic before a large dry-hop of Mosaic, Galaxy, Citra and Citra Cryo. Retractable Skeg pours a hazy pale orange with aromatics of tree ripened peaches, succulent mangos, and tangerines.

Rhubarb & Grüner Veltliner | 2020 Harvest

When we received our first pressing of New Jersey Grown and harvested Grüner Veltliner, we set aside a portion of the blend to then referment and age on freshly harvested rhubarb. For the base of this blend, our team utilized a blend of a 2-year-old buckwheat spontaneous beer along with a small portion of young spontaneous beer. The blend refermented for an additional eight months through the winter of 20|21 before receiving freshly harvest rhubarb from a century old rhubarb patch. The beer was allowed to soak on the rhubarb for an additional five months prior to packaging. The average age of Rhubarb & Grüner Veltliner | 2020 Harvest is 37 months at release. Rhubarb & Grüner Veltliner | 2020 Harvest pours a deep golden color with a firm white foam. Aromatics of strawberry rhubarb pie along with fresh cut green apples and honey.

Rhubarb & Nectarine | 2021 Harvest
Spontaneous
Rhubarb & Nectarine | 2021 Harvest was blended from a base of cognac barrel-aged spontaneously fermented beers from the 2019/2020 brewing season. In early July 2021, our team received several hundred pounds of Rhubarb from an over 100-year-old local patch and added them directly to oak with the blend. In early September, we received several hundred pounds of Yellow Nectarines which were then also added as a complement to the blend. The overall fruiting rate of this beer came in at over 6 lbs per gallons. At bottling, this blend had an average age of 27 months and has been conditioning since its bottling in 2022. Rhubarb & Nectarine | 2021 Harvest pours peachy yellow with aromatics of jammy vanilla, deep apricot stonefruit perfume, spritzy high carbonation, fruit syrup and a full mouthfeel supported by a high minerality and low acidity..

Rhubarb | 2020 Harvest
Spontaneous
Rhubarb | 2020 Harvest came from a single oak barrel of beer brewed with our aging recipe. For this recipe, which we always brew in the Spring, we increase the raw wheat proportion to 50% of the total grain along with a slight increase in the aged leaf hopping rate. The result tends to be a bit more aggressively flavorful in its youth but mellows elegantly with time. For Rhubarb | 2020 Harvest, we pulled this barrel at 15 months and racked it to age on over 4 lbs per gallon of freshly harvested and split rhubarb stalks in oak for an additional 8 months. Finally, to elevate the nuance of both the base beer and the harvest, we conditioned this beer for an additional 15 months in bottle prior to release. It pours a golden hue and pushes aromatics of sweet vanilla, pie crust, grapefruit and tangerine and drinks with a balanced acidity reminiscent of apricots, strawberries, and lively carbonation.

Rhubarb | 2021 Harvest is a blend of two traditionally brewed spontaneously fermented beers brewed in the Fall of 2019 and Spring of 2020. In the spring, our team made the trip to get rhubarb from a 105-year-old patch in New Jersey. The rhubarb stalks were split and added directly to oak at a rate of over 4 lbs per gallon. At bottling, this beer had an average age of 26 months. It has been conditioning with young spontaneously fermented beer since its bottling in 2022. Rhubarb | 2021 pours a burnt yellow color with a firm white foam, with aromatics of peach and flavor notes of fruit cup and lemon meringue.

Riesling | 2021 Harvest is a blend of traditionally brewed spontaneously fermented beers across three brewing seasons, with the oldest portion brewed in the Spring of 2018. In the Fall of 2021, our team picked up freshly harvested whole cluster New Jersey Riesling Grapes, which were then destemmed and added directly to oak with the blend at a rate of over 6.5 lbs per gallon. At bottling, this blend had an average age of 45 months and has been conditioning since its bottling in 2023. Riesling | 2021 pours a clear amber yellow, aromatics of sweet orange blossom honey, waxy grape skins, white raisin and a firm alcohol warmth

Riomaggiore
Italian-Style Pilsner
5.2% ABV
Riomaggiore, our 5.2% Italian-style Pilsner, is brewed with a simple malt bill consisting of Eraclea malt from Italy’s Adriatic coast. Riomaggiore was kettle-hopped with Spalt Select and Hallertau Mittlefruh from Seitz Farms in Germany, fermented cold, gently dry-hopped with more Spalt Select and Hallertau Mittlefruh. Riomaggiore was spunded prior to dry-hopping then lagered for eight weeks for packaging. Riomaggiore is an extremely drinkable, crisp pilsner with notes of honey, lemon, and floral noble hop character, inspired by a summer spent on the Italian coast.

SBX is our 8.4% Imperial IPA and big brother to our award-winning Sneakbox Pale Ale. SBX is hopped in the whirlpool with Citra, then dry-hopped with a massive amount of Citra, HBC 586 and Galaxy for a seriously citrusy flavor punch. SBX delivers on a dense hazy pour and a lasting white head. Aromatics of fresh mango, light pine, with bright creamy citrus notes, clean bitterness and a soft finish.

Sea Summit is our 6.8% West Coast-Inspired IPA brewed with a blend of Pilsner, wheat, dextrine and light crystal malts. It is hopped plentifully in the kettle and whirlpool with a blend of Centennial, Simcoe and Wimea hops before being fermented dry with a classic west coast yeast. Sea Summit is then dry hopped with Simcoe, Waimea, Citra and Centennial. Sea Summit pours a pale yellow color with a light natural haze. It has aromatics of citron, mangoes and an underlying fresh pine profile. Crisp and Clean.

Second | Anniversary Blend

Our Second Anniversary release is something we have been building towards since we started Field & Oak in early 2018. From the beginning, Field & Oak has drawn its inspiration from traditional Lambic brewing and blending techniques. For our Second Anniversary release we took inspiration from traditional Gueuze production. Our Second Anniversary is a blend of one, two and three year spontaneous beers and our first release of a three year blend. During the Summer of 2021, we tasted through our barrel cellar to select the best barrels from each of the past three seasons. Second pours a burnt orange color with a rocky white head and beautifully effervescent carbonation. Aromatics of grapefruit zest, bright lemon and citrus are supported by an underlying floral profile with well-integrated wood tannins that highlight a slightly acidic finish.
