Peach & Noyaux | 2020 Harvest was pulled from several batches across the 18|19 and 19|20 brewing seasons. The blend had an average age of eight months for fruiting. 90% of this blend originated from a turbid mashed spontaneous beer brewed with only barley and the addition of both aged and fresh hops. The remaining portion of this blend came from traditionally brewed spontaneous beers. For fruiting we received 1,100lbs of New Jersey grown yellow Clingstone peaches which had the pits separated and were hand-crushed at peak ripeness. We then lightly cracked the peach pits and added them to the blend with the fruit. The beer was allowed to referment and condition on the fruit for an additional year in oak. We bottled this blend in August of 2021 and it will have conditioned for 12 months prior to release. Peach & Noyaux | 2020 Harvest will have an average age of 32 months upon release. Peach & Noyaux pours a bright yellow with aromatics of juicy peach flesh, vanilla and marzipan.

Peach & Raspberry | 2021 Harvest – The base for this traditional spontaneous beer was brewed in the Spring 2020 brewing season and was approximately 16 months old when it was fruited directly in oak with red raspberries sourced from Pure Berry Co. in Vineland NJ followed by a large amount of crushed yellow clingstone peaches from Phillips Farms in Milford, NJ. After 6 months of conditioning on fruit this beer was then racked out of oak and bottled shortly afterwards before then resting an additional 12 months prior to release. Peach & Raspberry pours with a pretty peach yellow color with hints of pink and pushes heavy raspberry fruit flesh aromatics with subtle background peach notes all pulled together by a medium plus acidity level.

Peach & Strawberry | 2021 Harvest is from three different batches of pour traditional spontaneous recipe over two brewing seasons. The first from Fall 2019 fermented in one of our Foudres; the second from the Spring of 2020 and the third from another Foudre from Fall 2020. Hand picked New Jersey strawberries and yellow clingstone peaches were added to the blend at a combined rate of 7lbs per gallon. Bottled in January of 2022 with young spontaneous to condition, Peach & Strawberry | 2021 pours with a deep orange, light pink due with notes of peach flesh, crushed berries and peach rings and crushed strawberries.

Peacharine Punch
India Pale Ale

Peacharine Punch is hopped first in the whirlpool with Motueka, followed by a dry-hop of Peacharine, Mosaic, Galaxy and Simcoe. Peacharine Punch is then fermented on peaches, mango, guava and Cara Cara orange, giving this beer a supremely delicious fruit forward profile.

Pinot Noir & Chardonnay | 2020 Harvest
Spontaneous
In September 2020, we drove to Northern New Jersey to pick up freshly harvested whole clusters of Pinot Noir and Chardonnay grapes from one of our favorite local grape growers. To complement these grapes we selected a blend of two unique barrels, comprising of a two year old component brewed with buckwheat and an eight month old component brewed with spelt. We hand crushed and destemmed the grape clusters before adding them directly to oak. The spontaneous blend was then racked on top and allowed extensive contact time with the grapes and the skins. After a year it was racked to stainless for bottling. The average age of Pinot Noir & Chardonnay | 2020 Harvest is nearly 46 months at release. Pinot Noir Chardonnay | 2020 Harvest pours with a pink hue and white rocky foam head. It has aromatics of strawberries, cranberries, tree-ripened bosc pears, apricots and a firm minerality and pleasantly earthy notes.

Polotmavé 13°
Czech-Style Amber Lager
5.4% ABV
This 5.4% semi-dark Lager is brewed with a carefully selected grist of Czech Pilsner base, Floor Malted Dark Munich and a touch of roasted malts. This beer underwent a three-step mash process and was hopped with Czech Saaz in the kettle. After a cool primary fermentation with our house lager yeast, it was spunded for natural carbonation. Polotmavé 13° pours a deep garnet-amber with a light unfiltered haze. It boasts a crisp clean profile while retaining a subtle toffee, spice malt character and high drinkability. Perfect for the crisp Fall weather here on the coast.

Connected to our family and heritage, and in celebration of the Irish village of Portumna, Port Omna is brewed using pilsner malt, oats, and a combination of British crystal malts and chocolate roasted barley. Pouring a deep black with a delicate chocolate-colored head, Port Omna boasts aromatics of freshly roasted coffee and baker’s chocolate and is complemented by a velvety, smooth finish.

Port Omna Coconut Creamsicle is our 9.0% Imperial Milk Stout conditioned on Coconut, Citrus and Vanilla. Port Omna Coconut Creamsicle was brewed with pilsner malt, a blend of British crystal malts and chocolate roasted barley with a small amount of lactose to support the added complexity and flavor additions. This beer was conditioned on freshly toasted and shredded coconut, vanilla beans from Madagascar, Papa New Guinea and New Caledonia, and Kishu Mandarin and Bergamots from our friends at Flavors by Bhumi right here in New Jersey. Port Omna Coconut Creamsicle pours jet black with a mocha head and provides a smooth, delicious blend of creamy citrus, reminiscent of that classic boardwalk ice cream treat, with an extra layer of toasted coconut.

After fermentation, this beer was then conditioned on cinnamon, vanilla and coconut. This beer pours a dark black color with dark mocha colored head and presents a pleasantly rich aromatic and flavor profile featuring all of the sweet cinnamon and coconut notes of the sweet treat that inspired this beer, complete with a frothy and soft mouthfeel with low bitterness and soft finish.

Port Omna Peanut Butter Cup is brewed with pilsner malt, a blend of British crystal malts and chocolate roasted barley. We used a small amount of lactose for body and added complexity. This beer was conditioned on a generous amount of peanut butter and cacao nibs from Haiti, Ghana and Puerto Rico. Port Omna Peanut Butter Cup pours jet black with a mocha head and drinks with notes of dark chocolate ganache and natural peanut butter.

Port Omna Shamrock Shake is our second Port Omna variant, aged on fresh vanilla and peppermint. This 8.1% ABV variant recipe is brewed with a range of English crystal, chocolate, and roast malts with additional flaked oats and flaked barley added to the grist for extra body. After fermentation, this beer was conditioned on fresh vanilla beans sourced from Madagascar and Tanzania before then being conditioned further on a small amount of sifted peppermint for a short period of time. The resulting beer pours a dark black mocha color with a balanced sweet chocolate and mint flavor and aroma featuring notes of chocolate cookie crust, subtle chocolate peppermint patty, and a touch of marshmallow vanilla sweetness combining on top of a frothy and soft textured mouthfeel reminiscent of the namesake.

Port Omna Triple Coconut is the first of this year’s three Port Omna variants. This 8.1% ABV variant recipe is brewed with a range of English crystal, chocolate, and roast malts with additional flaked oats and flaked barley added to the grist for extra body. After fermentation, this beer was then conditioned on shredded coconut freshly toasted in house and immediately added to the beer at a rate equal to roughly three times our normal rate resulting in a delightful sweet character. This beer pours a dark black color with dark mocha colored head and presents a pleasantly rich aromatic and flavor profile featuring robust notes of toasted coconut macaroon with light milk chocolate ganache combining on top of a frothy and soft mouthfeel with low bitterness and soft finish.

Pumkpin Chai Latte

Pumpkin Chai Latte is our 7.3% IPA brewed with pumpkin in the mash and a small amount of lactose in the kettle to add body and sweetness. Finally it was conditioned on Chai tea, cinnamon, clove, ginger and nutmeg. This fall-spiced IPA pours a light orange pumpkin color with a slight haze and perfectly combines a creamy citrusy hop aromatic with subtle flavors of pumpkin pie spice, black Chai tea, and cinnamon.

Purple Mountains

Purple Mountains is hopped throughout the hot side with Calista and Hallertau Blanc before getting a big dry hop of more Hallertau Blanc, Calista, and Nelson Sauvin. The use of newer German hops combined with one of our favorite New Zealand hops creates unique layers of hop flavors including soft melon and orange sherbet intertwined with smooth wine grape and berry notes.

Bourbon Barrel-Aged Imperial Stout

A select blend of A Night To End All Dawns barrels including Widow Jane George Dickel 12-Year, Woodford Reserve Double Oak, and Elijah Craig Bourbon barrels with an average age of 20 months. This portion of the blend was then further conditioned on a selection of cacao varieties from Ghana, Haiti, Uganda, and the Dominican Republic at our highest rate. Quadruple Chocolate pours a dark mocha color and displays a multitude of rich and decadent bourbon and chocolate notes including chocolate sponge cake, fudge, and mousse creating a heavy chocolate complexity in a full, balanced approach.

Raspberry & Cherry | 2021 Harvest
Spontaneous
Raspberry & Cherry | 2021 Harvest was pulled from a single barrel of traditionally brewed spontaneously fermented beer from the 2020 brewing season. In early July 2021, we received a fresh harvest of Montmorency Cherries and added these directly to oak with the beer at a rate of over 4 lbs per gallon. Soon after, we received our harvest of New Jersey Red Raspberries and added them directly to the same barrels at a rate of over 1.5 lbs per gallon. At bottling, this blend had an average age of 17 months and has been conditioning since its bottling in 2022. Raspberry & Cherry | 2021 Harvest pours an ambered red with an off-white pink foam, and pushes aromatics of sweet red fruits, raspberry jam and underlying cherry pie filling. Flavors of cinnamon and a particularly jammy cherry profile balance a firm raspberry acidity and fruit tannins.

Raspberry | 2019 Harvest is a blend of two threads of spontaneously fermented beers brewed in the Fall of 2018, which were aged on New Jersey grown red raspberries. The dominant component of the blend was a nine-month-old spontaneous beer brewed to a higher gravity, leaving residual body to balance the acidity of the fruit. The beer conditioned on the raspberries in oak for five months prior to bottling. We then laid the blend down in bottle for an additional 15 months prior to release. Upon release, Raspberry | 2019 Harvest will be 28 months old. Raspberries generally are naturally one of the most acidic fruits we work with. We aim to balance the blend with a special higher gravity spontaneous beer recipe that follows a traditional process in all other aspects. The residual sweetness and body bring balance to the fruit, shifting the profile to raspberry jam while the intense stone fruit aromatics and minerality of our base beer can still be found. The raspberries provide a strong red color that carries through to the foam. The aroma is of bright raspberries and vanilla with an underlying fruity and earthy profile from our spontaneously fermented beer.
