A Night To End All Dawns – Vanilla Coconut Coffee (2023)
Bourbon Barrel-Aged Imperial Stout
12.2% ABV
A select blend of A Night To End All Dawns barrels including Widow Jane George Dickel 12-Year, Woodford Reserve Double Oak, and Elijah Craig Bourbon barrels with an average age of 20 months. This portion of the blend was then further conditioned on a heavy dose of toasted coconut and a unique blend of vanilla beans from the Cook Islands, Comoros, and Madagascar, before being finished with premium Bali roast coffee from our friends at Rook. This beer pours a dark roasty mocha color with balanced round flavors and aromatic notes of chocolate coconut cookies, nutty praline, and creamy sweet vanilla spice with complimentary coffee undertones and a velvety smooth mouthfeel and background bourbon aromatics.

Across The Galaxy
India Pale Ale
7.2% ABV
Across The Galaxy was brewed with a blend of Pilsner, White Wheat, Oats, and a touch of light crystal malts. It was hopped in the whirlpool with Riwaka followed by a heavy dry hopping of Galaxy, Riwaka, and HBC 586–a punchy blend of three of our favorite hops. Across The Galaxy pours a juicy pale orange color with an opaque level of haze and a forward hop expression of passionfruit, pineapple, and powdery sauv blanc undertones with a very low bitterness and soft profile.

Afterglow
India Pale Ale
6.2% ABV
Afterglow was the second batch of beer brewed when we opened in 2011. After a few years we stopped production to make room in the schedule for more Head High, but it's back. Afterglow was brewed with a blend of 2-row malts that are slightly darker and more flavorful than our house pilsner, and low-level caramel malts for a fuller mouthfeel and slightly sweeter finish. Afterglow was hopped in the kettle with Simcoe and Chinook and finished in the Whirlpool with Cascade. We used a classic West-Coast yeast at a lower temperature for a clean fermentation with low ester production to let the malts and hops shine. Afterglow was dry-hopped, over two additions, with Simcoe, Chinook and Cascade, followed by a second round with Citra and more Simcoe, Cascade and Chinook Cryo. Afterglow is a full-bodied IPA that pours a vibrant rose color that replicates the color of the sky after the sun goes down. It drinks with hoppy notes of orange citrus, pineapple, grapefruit and a hit of piney resin—all perfectly balanced by a subtle malty sweetness.

Aloha Shirt
India Pale Ale

Aloha Shirt is brewed with Pilsner malt, wheat with a touch of lactose, and is hopped with Sabro in the whirlpool with blend of Sultana and Sabro in the dry-hop. We added pineapple to the mix towards the end of fermentation and conditioned the beer on freshly processed raw coconut to usher in the taste of an island vacation. Sabro reinforces notes of coconut and sweet cream while Sultana carries the beer’s unique pineapple and citrus flavors.

Amburana Double Barrel Aged Wooden Cleat (2025)
Double Barrel-Aged Barleywine
13.6% ABV
Amburana Double Barrel Wooden Cleat is a blend of barleywines aged for 30 months in Elijah Craig and Buffalo Trace bourbon barrels. We then aged this blend in a single Amburana wood barrel for two months before racking it for extended cold conditioning. Amburana Double Barrel Wooden Cleat pours a dark chocolate color with notes of marshmallow, cinnamon, toasted wood and a complex fruit profile.

Apiary | Blend N°2
Saison
Apiary | Blend N°2 was brewed in September of 2023 with a blend of pilsner, chitted barley and raw spelt. We utilize a traditional step-mashing process to accentuate an extra-dry and thirst-quenching drinking experience. We hop Apiary with both aged and fresh hops in the kettle to drive aromatics of fresh grapefruit, white pepper and pleasant floral notes. Apiary also receives a large addition of New Jersey harvested blueberry blossom honey, which drives additional floral aromatics, mouthfeel and acidity complexity. Apiary is fermented directly in oak with our Saison yeast along with our resident microflora. Just prior to bottling, we blended in a small portion of mature 4-year-old foudre-aged spontaneously fermented beer to bring depth and complexity to the blend. At bottling, Apiary has an average age of 10 months and has been conditioning since its bottling March 2024. Apiary Blend No2 pours a pale straw color with an effervescent, prickly carbonation, pungent aromatics of fresh noble hops featuring fresh lemon and herbal notes, blueberry blossom honey shows through in the clean waxy mouthfeel which is supported by a pleasant hoppy bitterness and lightly developing acidity

Apiary | Blend Nº1
Saison
Apiary was brewed with New Jersey grown and malted barley and buckwheat with the addition of New Jersey blueberry blossom honey. We used a traditional step mash to drive a crisp, dry profile, balanced by the bittering addition of aged whole leaf noble hops. Apiary presents with a honeycomb aroma balanced by a dry fermentation and high effervescence. The extended conditioning time pushes aromatics of hay and light funk, grapefruit, spice, toasted brioche and honey.

Barrel Aged Brownie Sugar Adjunct Magik (2021)

This decadent blend was brewed with a massive amount of brownie batter and then aged for 17 months in Buffalo Trace and Weller Bourbon barrels. Next, we conditioned it on a thoughtful amount of Haitian cacao nibs and Madagascar vanilla beans. The vanilla and caramel notes from the barrel aging is intensified by the addition of cacao nibs and vanilla beans to create a truly indulgent experience that reminds us of the ultimate brownie à la mode.

This year's vintage of Bourbon Barrel Aged Mexican Brunch is a select blend of barrel-aged Imperial Milk Porters brewed with maple syrup and aged in Elijah Craig 8-Year Bourbon, Elijah Craig Toasted Oak, Heaven Hill Bourbon and Wild Turkey 10-Year Bourbon barrels. This blend was racked into stainless and conditioned on cacao sourced from Haiti and Ghana, freshly ground coffee from Rook, cinnamon, and ancho chilies. Pouring deep black with a velvety body, Bourbon Barrel Aged Mexican Brunch opens with aromatics of bourbon-soaked dark chocolate, roasted coffee, and maple syrup. Layers of caramelized sweetness, warming cinnamon, and subtle chili spice mix with flavors of rich oak and vanilla from extended barrel aging, creating a bold yet refined drinking experience.

This 14.3% blend of Bourbon Barrel-Aged Imperial Milk Porters was brewed with maple syrup and lactose. The beer was aged in a blend of Heaven Hill Elijah Craig 8-Year Bourbon, Elijah Craig Toasted Bourbon and Wild Turkey Russell's Reserve 10-Year Bourbon for an average of 30 months. After extended time in oak, this variant was conditioned on graham cracker, toasted coconut, cinnamon, cacao, and ancho chilies. Pouring jet black with a dense, creamy mouthfeel, Bourbon Barrel Aged Mexican Dessert leads with aromas of spiced chocolate, toasted coconut, and freshly baked graham cracker crust, with warm bourbon undertones. Notes of cinnamon and subtle chili spice round out a rich profile layered with dark cocoa, sweet oak, and a smooth, dessert-like finish.

2024 Barrel-Aged Evening Bell is a blend of our high gravity Evening Bell recipe aged in Heaven Hill Wheat Whiskey barrels and Woodford Reserve Double Oaked barrels for close to a year and a half. Barrel-Aged Evening Bell pours black with a dark tan head and a big, robust, milk chocolate candy profile rounded out with superbly smooth finish and big mouthfeel.

2024 Barrel-Aged Mexican Brunch is a select blend of barrel aged Imperial Porters aged in freshly emptied Old Fitzgerald and Elijah Craig 8y Bourbon barrels for an average of 22 months. The blend was then racked into stainless and conditioned on cacao sourced from Ghana and Ecuador, freshly ground coffee from Rook, maple, cinnamon, and ancho chile. Barrel-Aged Mexican Brunch pours dark black and opens with aromatics of bourbon-soaked chocolate java bean and flavors of caramel, maple and spice, combining for a bold and refined barrel-aged beer.

This is the first barrel aged version of Morning Bean. Barrel Aged Morning Bean- a 11.9% blend of Imperial Milk Porters aged in Old Fitzgerald, Willett, and 17-year Wild Turkey bourbon barrels for an average of 15 months. We then conditioned this decadent beer on ton of hand-cut and scraped Madagascar vanilla beans and Rook Coffee that complement the notes of brown sugar and vanilla from barrel aging to create a bold, flavorful porter.

BA Morning Bean is a select blend of Imperial Milk Porters aged in previously used whiskey barrels including Buffalo Trace Weller Bourbon, Buffalo Trace Stagg Jr., and Wild Turkey 10y Russel’s Reserve barrels with an average age of 23 months. This portion of the blend was then further conditioned on a selection of premium vanilla beans sourced from Madagascar and Tanzania along with a small portion of coffee from Rook. This beer pours a dark black color with mocha crème head and presents deep notes that combine a robust bourbon-soaked chocolate, nutty praline, and Java chip coffee profile and warming barrel aged character throughout.

Barrel-Lagered Winter Daydream

Barrel Lagered Winter Daydream is a 7.9% Winter Bock. We took Winter Daydream and gave it an additional 2 months of lagering in freshly emptied bourbon barrels. Brewed with traditional German base and roasted malts, Winter Daydream pours a dark mahogany with ruby highlights. It has rounded aromatics with nuances of bourbon, vanilla and chocolate from the intermingling of the beer and oak with a plush mouthfeel boosted by the additional lagering time. Barrel Lagered Winter Day Dream, balanced and clean.

Bière de Noël | Winter 2021
Flemish-Style Red
Bière de Noël | Winter 2021 was brewed over two batches in the 18|19 season as an homage to some of our favorite specialty winter beers from the West Flanders region of Belgium. The beer was brewed using a turbid mash with a grist including some darker specialty grains and a long 9-hour boil to promote deep flavor development of plum and figs. Aged hops were used which brings a pleasant orange-citrus note. It was open fermented in our coolship before maturing in oak for 27 months. With an additional 10 months of bottling conditioning time, our first Bière de Noël has an age of 37 months upon release. Bière de Noël | Winter 2021 pours a mahogany color with highlights of burnt orange and a creamy brown head. It pushes bright aromatics of strawberry, raspberry and blackberry bramble along with supporting notes of vanilla, figs, dates and orange rind coupled with a hint of roasty chocolate and coffee complexity.

Bière de Noël | Winter 2022
Spontaneous
Bière de Nöel | 2022 is brewed with barley grist—60% of which is malted to a low specification, while the rest is left unmalted. This beer undergoes a traditional turbid mash and a six-hour boil to enhance wort caramelization and mouthfeel. It uses aged hops at the start of the boil but receives a heavy dose of fresh whole leaf Czech Saaz hops as it enters the coolship for spontaneous inoculation. For Bière de Nöel | 2022, a blend was made pulling from primarily three-year and two-year components with an average age of 24 months, then dry hopped with fresh 2021 harvest Hallertau Mittelfruh hops from our Florian Seitz at Seitz Farms in Bavaria. Prior to bottling, we blended in young one-year beer from the same recipe to provide the entirety of the fermentable sugars. It pours a golden straw with a lasting white foam. Strong hop aromatics of pear, fig and apricot are accompanied by flavors of French cider, Alsatian wine a strong minerality and a complex acid profile.

Bière de Noël | Winter 2023
Spontaneous
Bière de Nöel | Winter 2023 is a special three-year Congac-aged Spontaneous Blend. The oldest component of this special blend was from a wheat-heavy batch brewed during our Spring 2018 season that was fermented in a 600L Pineau des Charentes cask. The two-year component was from a traditional mash brew during the Spring of 2020 that was fermented in a 600L Cognac cask, while the youngest of the three was brewed with New Jersey Blueberry Blossom Honey during our Fall of 2020 brew season and fermented in a 450L Pineau des Charentes cask. The blend of these three spontaneous beers, using all New Jersey grown malts and some honey, was laid to rest in a Cognac cask for seven months prior to bottling. In March 2022, we blended back a small portion of young spontaneous beer and bottled. Bière de Nöel had an average age of 23 months at bottling. This blend pours with a highly carbonated mousse-like foam head with a burnt golden orange color. It features a balanced and soft profile combining notes of orange citrus, candied fruit, apricot, and light cherry/almond rounded out by subtle Cognac barrel caramelized fruitiness and soft acidity. Bière de Nöel | Winter 2023 a perfect and bright pairing for a winter holiday enjoyment.

Bière de Noël | Winter 2024
Spontaneous
Bière de Nöel | Winter 2024, a Two-Year Spontaneous Blend, is available in 500mL bottles starting tomorrow. This festive beer began in 2020 as a single batch of traditional spontaneously fermented beer containing New Jersey blueberry blossom honey. A majority of this beer was racked to one of our Sangiovese wine foudres for 27 months, selected for its well-rounded and refreshing profile. Prior to bottling in March 2022, we selected a young spontaneously fermented beer that still contained a portion of fermentable sugar and blended it with the two-year-old spontaneous beer. The carbonation for this beer is entirely derived from the sugars present in the young beer. Bière de Nöel | Winter 2024 pours gold with aromatics of ripe peaches, fruit cups and a touch of honey supported by a bright but balanced acidity and a high minerality.
