Barrel Lagered Winter Daydream is a 7.9% Winter Bock. We took Winter Daydream and gave it an additional 2 months of lagering in freshly emptied bourbon barrels. Brewed with traditional German base and roasted malts, Winter Daydream pours a dark mahogany with ruby highlights. It has rounded aromatics with nuances of bourbon, vanilla and chocolate from the intermingling of the beer and oak with a plush mouthfeel boosted by the additional lagering time. Barrel Lagered Winter Day Dream, balanced and clean.

Bière de Nöel | 2022
Spontaneous
Bière de Nöel | 2022 is brewed with barley grist—60% of which is malted to a low specification, while the rest is left unmalted. This beer undergoes a traditional turbid mash and a six-hour boil to enhance wort caramelization and mouthfeel. It uses aged hops at the start of the boil but receives a heavy dose of fresh whole leaf Czech Saaz hops as it enters the coolship for spontaneous inoculation. For Bière de Nöel | 2022, a blend was made pulling from primarily three-year and two-year components with an average age of 24 months, then dry hopped with fresh 2021 harvest Hallertau Mittelfruh hops from our Florian Seitz at Seitz Farms in Bavaria. Prior to bottling, we blended in young one-year beer from the same recipe to provide the entirety of the fermentable sugars. It pours a golden straw with a lasting white foam. Strong hop aromatics of pear, fig and apricot are accompanied by flavors of French cider, Alsatian wine a strong minerality and a complex acid profile.

Bière de Nöel | 2023
Spontaneous
Bière de Nöel | Winter 2023 is a special three-year Congac-aged Spontaneous Blend. The oldest component of this special blend was from a wheat-heavy batch brewed during our Spring 2018 season that was fermented in a 600L Pineau des Charentes cask. The two-year component was from a traditional mash brew during the Spring of 2020 that was fermented in a 600L Cognac cask, while the youngest of the three was brewed with New Jersey Blueberry Blossom Honey during our Fall of 2020 brew season and fermented in a 450L Pineau des Charentes cask. The blend of these three spontaneous beers, using all New Jersey grown malts and some honey, was laid to rest in a Cognac cask for seven months prior to bottling. In March 2022, we blended back a small portion of young spontaneous beer and bottled. Bière de Nöel had an average age of 23 months at bottling. After conditioning for around 20 months, today we are releasing Bière de Nöel | Winter 2023 at the tasting room @kanebrewing in time for sharing with friends and family during the holiday season. This blend pours with a highly carbonated mousse-like foam head with a burnt golden orange color. It features a balanced and soft profile combining notes of orange citrus, candied fruit, apricot, and light cherry/almond rounded out by subtle Cognac barrel caramelized fruitiness and soft acidity. Bière de Nöel | Winter 2023 a perfect and bright pairing for a winter holiday enjoyment.

Bierhalle
Märzen Lager
5.6% ABV
Bierhalle, our 5.6% German-style Märzen Lager, was brewed using the oldest German malting barley variety Isaria, and a blend of Barke Pilsner and Vienna made from heirloom barley varietals. It was hopped in the kettle with several additions of Hallertau Mittelfrüh from Seitz Farms in Germany. Towards the end of a cool fermentation with our house lager yeast, Bierhalle was spunded to allow the beer to carbonate naturally. It was then cold lagered in the brite tank for over a month before packaging. Bierhalle pours a deep burnt gold color with a light unfiltered haze. The use of German heirloom malts provide a malty-sweet taste and soft biscuit like aromas with notes of honey and toasted nuts. Bierhalle is a full-bodied lager with a gentle natural carbonation and a crisp, clean finish.

Black Raspberry | 2020 Harvest
Spontaneous
Black Raspberry | 2020 Harvest is a blend composed of two traditional spontaneous beers brewed in the Spring and Fall of 2019. The blend was racked into a single cask with fresh New Jersey black raspberries where it aged on fruit for an additional 6 months. At the time of bottling, the beer had an average age of 19 months. We then laid the beer down in bottle for an additional 9 months of conditioning. Black raspberries bring intensely jammy pie aromatics with a warm, rounded fruitiness and a deep purple color. The blend drinks like a bold red wine with undertones of vanilla and a bit of an earthy funk.

Blackberry & Blueberry | 2020 Harvest
Spontaneous
For the first release of this fruiting combination, we chose a blend across four different batches brewed in the Spring and Fall seasons of 2019. Approximately 20% of this blend consisted of an experimental batch that we brewed in Spring of 2019 where we replaced the unmalted wheat portion of the grist with unmalted buckwheat. The remaining portion of the blend was traditionally brewed spontaneous beer, a portion of which was aged in a chestnut puncheon. We pulled the blend at an average age of 13 months for fruiting in the summer of 2020. We separately refermented the beer on New Jersey harvested blackberries and blueberries and then conditioned for an additional 10 months in oak. Blackberry & Blueberry | 2020 Harvest pours a burnt purple, pushing aromatics of blackberry ice cream and blueberry wine along with deep flavor notes of raspberry jam, red wine and bramble. It pours with spritely carbonation and drinks with a balanced wine-like malolactic acidity.

Blackberry & Blueberry | 2021 Harvest
Spontaneous
Blackberry & Blueberry | 2021 Harvest is a blend of traditionally brewed spontaneously fermented beers from a single brewing season: one batch containing New Jersey blueberry blossom honey, and another aged in a chestnut puncheon. In August of 2021, we picked up our harvest of New Jersey grown blackberries and added them directly to oak with the blend for refermentation. At the end of summer, we received that year's New Jersey blueberry harvest and added these directly to stainless. We racked the blackberry spontaneously fermented beer to cold soak on the skins and juices of the blueberries for a short period of time before racking back to oak for refermentation and conditioning. At bottling, this blend had an average age of 27 months and has been conditioning since its bottling in early 2022. Blackberry & Blueberry | 2021 Harvest pours a deep purple color with ruby highlights and a rocky pink foam. This beer pushes aromatics of jammy blueberries and overripe blackberries supported by a malolactic creaminess, making this reminiscent of a full-bodied California Cabernet Sauvignon.

Blue Ramp is our 7.4% IPA brewed to showcase some of our favorite hops. Blue Ramp is hopped in the whirlpool with Riwaka then dry hopped with a massive amount of Galaxy, Citra, Nelson and HBC 586. The combination of these hops puts forth one of the juiciest hop profiles we have made to date. Blue Ramp pours a hazy golden color with aromatics of passionfruit, overripe mangoes and guava.

Blueberry | 2020 Harvest
Spontaneous
In July of 2020, we picked up a massive harvest of New Jersey blueberries from one of our favorite farms. Our team matched those berries with a blend across two years of spontaneously fermented beer, a portion of which was brewed with buckwheat in place of the traditional wheat usage. The beer was racked onto the blueberries and allowed to soak cold to extract all of their fresh berry flavors while limiting their tannic extraction. The beer was then racked off the fruit and back into oak for further conditioning for an additional 10 months. After bottling, Blueberry | 2020 Harvest spent two years conditioning in bottle to allow the fruit and blend to develop gracefully. The average age of Blueberry | 2020 Harvest is 49 months at release. Blueberry | 2020 Harvest pours a purplish pink with a pretty off-white foam. Aromatics of jammy blueberry pie, fresh citrus and peach with a structured mouthfeel and a balancing vinous character.

Boardwalk Slice
India Pale Ale

Boardwalk Slice, our 7.2% IPA, features a proprietary hop with a unique name grown exclusively by our friends at Segal Hop Ranch in Yakima Valley. The hop is called Anchovy and pushes notes of fruit punch and Swedish Fish candies. We had the opportunity to first experience Anchovy straight from the bine while walking the hop yards with John Segal and Martin Ramos, the farm's hop breeder, last year during harvest. Based on that initial rub we couldn’t wait to get the unique flavor profile of this hop into a one of our beers. For Boardwalk Slice we paired this hop with Motueka in the whirlpool and Citra in the dry-hop to create a tropical fruit punch profile, perfect for a summer IPA. Boardwalk Slice pours a hazy golden orange with aromatics of watermelon candies, lime zest and your favorite childhood fruit punch.

Bourbon Barrel-Aged Driftwood (2023)
Barrel-Aged Imperial Brown Ale

Driftwood Bourbon is our 13.8% Imperial Brown Ale, a beautifully, smooth sipper. Aged in a blend of Buffalo Trace EH Taylor Small Batch Bourbon and Woodford Reserve Double Oaked Bourbon casks for an average of 32 months. It is brewed with a base of Golden Promise barley and a blend of British crystal and roast malts and the addition of both maple syrup and molasses in the boil. Driftwood Bourbon pours a dark mahogany color with aromas of maple soaked french toast, flavors of marshmallows, creamy bourbon vanilla and baking spices.

Barrel-Aged Mexican Brunch is our 12.7% Imperial Milk Stout brewed with maple syrup and lactose, aged in bourbon barrels then conditioned on cinnamon, coffee, cacao nibs, ancho chilies and lactose. This release came from a blend of Imperial Milk Porters aged in Old Fitzgerald, Heaven Hill and Woodford Reserve Double Oaked Bourbon barrels. The blend was aged for an average of 16 months before conditioning and release. Barrel-Aged Mexican Brunch pours black with a mocha head and aromatics of chocolate and coffee upfront supported by notes of vanilla cream and caramel from the extended barrel aging. Cinnamon, maple and chilies all play supporting roles to round out this fantastic Mexican Chocolate-inspired beer.
