First | Anniversary Blend
Spontaneous
FIRST is a particularly special single barrel that our team highlighted as having both exceptional fermentation and barrel qualities that will age for years to come. This beer comes from the last batch of the 19|20 brewing season. This recipe pushes the level of unmalted wheat to 50% coupled with a higher hopping rate and longer boil. FIRST spontaneously fermented and aged for two seasons exclusively in a single Calvados pipe that was previously used for many decades to age French apple brandy. We packaged this beer without the use of a simple sugars but instead conditioned it exclusively with a small addition of young spontaneously fermenting beer. We believe that these painstaking processes will lend an incredible ageability to this beer, allowing it to develop gracefully for many anniversaries to come. FIRST pours with champagne-like carbonation and well-integrated CO2 that builds a beautiful foam. Aromatics of spicy apple pie, a sherry-like nuttiness, an exceptional minerality couple with a citrus profile.

Second | Anniversary Blend
Spontaneous
Our Second Anniversary release is something we have been building towards since we started Field & Oak in early 2018. From the beginning, Field & Oak has drawn its inspiration from traditional Lambic brewing and blending techniques. For our Second Anniversary release we took inspiration from traditional Gueuze production. Our Second Anniversary is a blend of one, two and three year spontaneous beers and our first release of a three year blend. During the Summer of 2021, we tasted through our barrel cellar to select the best barrels from each of the past three seasons. Second pours a burnt orange color with a rocky white head and beautifully effervescent carbonation. Aromatics of grapefruit zest, bright lemon and citrus are supported by an underlying floral profile with well-integrated wood tannins that highlight a slightly acidic finish.

THIRD | Anniversary Blend
Spontaneous
THIRD was blended to commemorate our Third Anniversary. The components of this beer were brewed between our Fall 2018 and Spring 2020 brewing seasons. These batches included the addition of New Jersey Blueberry Blossom Honey to the coolship and were bottled with a small portion of young spontaneous beer for conditioning. THIRD had an average age of 27 months when it was then blended with a small portion of young spontaneous beer and bottled in February 2022. After a period of further bottle conditioning, THIRD is ready to enjoy. THIRD pours with high carbonation and a tight foam head with a burnt orange honey color. It features a soft and balanced acidic profile with notes of citrus and honeysuckle, a light brettanomyces character and a crisp, dry finish.

FOURTH | Anniversary Blend
Spontaneous
FOURTH is our very first four-year spontaneous blend brewed between our Spring 2018 and Spring 2021 brewing seasons. Each of these batches was brewed following a traditional spontaneous brewing process using a turbid mash with a grist consisting entirely of New Jersey-grown malt. Each blend underwent an extended boil with aged hops, then was transferred to our coolship where it cooled overnight, exposed to the open air and resident microflora. Our team highlighted the individual casks to produce this blend, selected for their highly aromatic profiles coupled with a vibrancy that contrasts their age. FOURTH had an average age of 25 months before it was blended with a small portion of young spontaneous beer and bottled in March 2022. After a period of extended bottle conditioning, FOURTH is ready to enjoy. FOURTH pours a pale-yellow color with a creamy white foam, boasting aromatics of lemon meringue pie, toasted oak and orange citrus zest. FOURTH finishes with a rounded mouthfeel and notes of fruit parfait, lemon custard and a heavy minerality.

Apiary | Blend N°2
Saison
Apiary | Blend N°2 was brewed in September of 2023 with a blend of pilsner, chitted barley and raw spelt. We utilize a traditional step-mashing process to accentuate an extra-dry and thirst-quenching drinking experience. We hop Apiary with both aged and fresh hops in the kettle to drive aromatics of fresh grapefruit, white pepper and pleasant floral notes. Apiary also receives a large addition of New Jersey harvested blueberry blossom honey, which drives additional floral aromatics, mouthfeel and acidic complexity. Apiary is fermented directly in oak with our Saison yeast along with our resident microflora. Just prior to bottling, we blended in a small portion of mature 4-year-old foudre-aged spontaneously fermented beer to bring depth and complexity to the blend. At bottling, Apiary has an average age of 10 months and has been conditioning since its bottling March 2024. Apiary | Blend N°2 pours a pale straw color with an effervescent, prickly carbonation, pungent aromatics of fresh noble hops featuring fresh lemon and herbal notes, blueberry blossom honey shows through in the clean waxy mouthfeel which is supported by a pleasant hoppy bitterness and lightly developing acidity

Grisaille | Blend Nº2
Saison
Grisaille | Blend N°2 is our interpretation of a Grisette, a refreshing, low-alcohol beer originally brewed in Belgium and enjoyed by coal miners after a long day of work. Grisaille | Blend N°2 is brewed with a blend of pilsner malt, chitted barley, malted wheat and malted oats from Rabbit Hill Malthouse. We hopped this beer with aged and fresh noble hops before fermenting it in oak with our favorite saison yeast and our local flora. After aging for several months in oak, we blended in a small portion of well-aged spontaneously fermented beer. The mingling of the saison and spontaneously fermented beer through the process of bottle conditioning provides a remarkably complex beer to drink fresh or continue aging. Grisaille | Blend N°2 pours a pale golden yellow and pushes notes of fresh hay, stone fruit, and bright lemon with a soft bitterness and lively carbonation to create a crisp and refreshing finish.

Heirloom | Blend N°2
Saison
Heirloom | Blend N°2 is our World Beer Cup gold medal winning Table Saison. This beer is our interpretation of the lower ABV saison style that was suitable for drinking throughout the day and often served to the whole family with a meal. Heirloom | Blend N°2 is brewed with a blend of pilsner malt, chitted barley and malted wheat. We hop it with both aged and fresh noble hops before fermenting it in oak with our favorite saison yeast and our local flora. After aging for several months in oak, we blended in a small portion of well-aged spontaneously fermented beer. The mingling of the saison and spontaneously fermented beer through the process of bottle conditioning should provide for a remarkably complex beer to drink fresh or continue aging.

Markt | Blend N°2
Saison
Markt | Blend N°2 was brewed in August of 2023 with a blend of pilsner, wheat malt and raw barley. We utilize a traditional step-mashing process to accentuate an extra-dry and thirst-quenching drinking experience. We hop Markt with both aged and fresh hops in the kettle to drive aromatics of fresh grapefruit, white pepper and pleasant floral notes. Markt also receives a large whirlpool hop addition of German noble hops in order to drive a pleasant citrusy herbal profile that develops complexity with our mixed yeast culture. Markt is fermented directly in oak with our saison yeast along with our resident microflora. Just prior to bottling, we blended in a small portion of mature 4-year-old foudre-aged spontaneously fermented beer to bring depth and complexity to the blend. At bottling, Markt has an average age of 12 months and has been conditioning since its bottling in March 2024. Markt Blend No2 pours a clear straw color with aromatics of lemon balm, fresh sliced green apples and grapefruit and flavors of orange citrus with a lightly spicy noble hop finish, well balanced with a light acidity and high levels of carbonation

A mixed culture Grisette brewed with pilsner, wheat and oats, and hopped with whole leaf UK East Kent Goldings. We use a traditional step mash for dry, crisp profile balanced by the aged hops in an extended boil. Grisaille pours a bright straw hue with a rocky white head pushing aromatics of vanilla, lemongrass and honeysuckle. Grisaille carries oak driven flavors of vanilla and coconut that play off the fruitier Brettanomyces derived pineapple and citrus flavors.

Saison
Heirloom is brewed with New Jersey grown and malted Pilsner, chit malt and malted wheat, bittered with aged hops, then we added fresh Styrian Goldings throughout the kettle. Open fermented with our mixed saison culture before being racked to oak. Heirloom is blended and given a light dry hopping with EKG. The dry hopping provides additional structure to the mouthfeel and some hay-like aromatics that evolve over time with Brettanomyces in the bottle. Drinks with a light body, acidity, and refreshing high carbonation.

Markt | Blend N°1
Saison
Markt | Blend N°1 was brewed with NJ grown and malted barley and wheat. We used a traditional step mash to accentuate a dry, crisp profile in the beer while laying the groundwork for bright, funky aromatics. Markt was bittered with aged hops in addition to a layering of fresh Saaz through the boil and whirlpool before being knocked out directly into oak for fermentation. At two months into fermentation, we blended in 20% of spontaneous beer from two separate year-old traditional batches and further conditioned the blend in oak before blending. We then laid the beer down in bottle for an additional nine months. Markt drinks crisp, light in body with pear and citrus aromatics and flavor with a decidedly more fresh, hoppy profile.

Dry Hopped Markt | Blend N°1
Saison
Dry Hopped Markt is a blend of hoppy saison brewed with pilsner and wheat. It was aged for a year in oak before being blended, dry hopped and bottled. It was dry hopped with Amarillo and Waimea hops at a rate of 3 lbs / BBL. The interplay of the dry hop and the mixed culture brings forward notes of key lime, grapefruit aromatics, a balancing acidity and oaky vanilla undertones.

Enchanted Grove
Spontaneous
Back in 2021 we got together with our friends from Primitive for a collaborative Spontaneous blend that would become Enchanted Grove. For this blend, we chose some mature spontaneously fermented beer across three brewing seasons, with the oldest component from the early spring of 2018. A portion of this blend was also aged in large cognac puncheons. After blending, we allowed this beer to continue to mellow for an additional two years. In the winter of 2023, we sourced New Jersey grown yuzu and sudachi citrus fruits which we zested and added directly to the blend before bottling. At the time of bottling, this blend had an average age of 58 months, making it our most mature spontaneously fermented blend to date. Enchanted Grove has been conditioning since its bottling in early 2024. Enchanted Grove pours a golden orange with aromatics of orange blossom and orange citrus with an underlying complexity of yeasty cellar funk. It offers flavors of lemon-lime soda, white wine raisins, lemon custard and apple blossoms with a well-integrated acid profile supported by high carbonation.

Sugar Plum | Winter 2025
Spontaneous
Sugar Plum | Winter 2025 is a blend of two casks of spontaneously fermented beer, one being a 44-month-old traditional recipe and one being a 29-month-old all barley grist with the use of fresh hops. In July of 2023, our team picked up 300 lbs. of freshly harvested sugar plums from one of our favorite New Jersey farms. Our team added these freshly harvested plums directly to oak before racking the beer on top of them. After extended resting on the fruit, we bottled this beer in January 2024 where it has been conditioning for the past year. At release, Sugar Plum | Winter 2025 has an average age of 53 months. Sugar Plum | Winter 2025 pours a light purple color and has aromatics of fresh plum skins, apricots and gummy Christmas trees.

Blackberry | 2022 Harvest

Blackberry | 2022 Harvest is a blend of traditionally brewed spontaneously fermented beers across the 2019 and 2021 brewing seasons, containing a portion of blueberry blossom honey and partially fermented in ex-Pineau des Charentes casks. In August of 2022, our team picked up the year's blackberry harvest from one of our favorite South Jersey farms and added them whole, directly through the head of a barrel at a rate of over 8 lbs. per gallon along with the blend for refermentation. At the time of bottling, this blend had an average age of 43 months and has been conditioning since its bottling at the end of 2023. Blackberry | 2021 Harvest pours ruby red with a cream foam, with aromatic notes of jammy blackberries and vanilla blackberry ice cream. Taste notes of lemon sorbet and lemon curd.

Blueberry | 2022 Harvest

Blueberry | 2022 Harvest is a blend across two brewing seasons including a portion aged in cognac casks and a portion brewed with New Jersey blueberry blossom honey. In August of 2022, we picked up the year's blueberry harvest which was hand crushed and cold-soaked on the blend for juice extraction and brief skin contact at a rate of 8 lbs. per gallon. The fruited blend was then racked to oak for additional conditioning. At the time of bottling, this blend had an average age of 43 months and has been conditioning since its bottling in late 2023. Blueberry | 2022 Harvest pours a deep purple color with a creamy pink foam, aromatics of creamy blueberry pie and citrus. The beer presents a very restrained acidity with complexity from the blueberry skins and the fruit juices supported by a strong vanilla note.

Strawberry | 2022 Harvest was blended across two brewing seasons of traditionally brewed spontaneously fermented beer, including a portion of 4-year-old beer. In early June of 2022, we traveled to South Jersey to pick up several hundreds of pounds of overripe strawberries. Our team hand-crushed the strawberries and added them directly to the blend in stainless for a short juice extraction at a rate of 8 lbs per gallon before refermentation in oak. At bottling, this blend had an average age of 48 months and has been conditioning since its bottling in 2023. Strawberry | 2022 Harvest pours a burnt orange with aromatics of strawberry candy cereal and juicy strawberry gushers with flavors of strawberry lemonade and a balanced but complex acidity.

Strawberry & Elderflower | 2022 Harvest

Strawberry & Elderflower | 2022 Harvest is a blend of traditionally brewed spontaneously fermented beers across two brewing seasons, with the oldest portion brewed in the Spring of 2019. In early June, our team went out to one of our favorite Central Jersey farms to hand-harvest elderflower before destemming it and soaking it cold overnight in the blend. This portion of the blend was then laid down in cask to mellow. Just after harvesting elderflower, we received our harvest of overripe New Jersey strawberries that were hand-crushed and added directly to the same blend at a rate of 8 lbs per gallon. Just prior to bottling, our team tasted through the barrels and created a blend of equal parts strawberry spontaneous and elderflower spontaneous to highlight the complexity of the two harvests. At bottling, this blend had an average age of 48 months and has been conditioning since its bottling in 2023. Strawberry & Elderflower | 2022 Harvest pours a salmonberry pink color with aromatics of perfumey lychee and floral bouquets balanced by an underlying strawberry sweetness, Turkish delight and rosewater with a very well-integrated acidity

Black Currant | 2021 Harvest is a three-year blend of traditional spontaneous beers brewed in the Spring 2018, Spring 2020, and Spring 2021 brewing seasons. Our team picked up black currants from Phillips Farms in Milford, NJ and added them directly into barrels containing the three-year blend which had an average age of 17 months at the time of fruiting. After aging on the currants for an additional 6 months we bottled and laid the beer down for an additional 12 months of conditioning. Upon release, Black Currant ’21 Harvest will be 29 months old. This beer pours a very clear burnt red/crimson color with strong off-white foam and carries a unique citrusy and piney overall character better described as twiggy or woodsy with light citrus and funk. Black Currant has a good tannin fruit profile with a clean medium acidity presenting a nicely balanced and unique overall character.

Blackberry & Blueberry | 2021 Harvest is a blend of traditionally brewed spontaneously fermented beers from a single brewing season: one batch containing New Jersey blueberry blossom honey, and another aged in a chestnut puncheon. In August of 2021, we picked up our harvest of New Jersey grown blackberries and added them directly to oak with the blend for refermentation. At the end of summer, we received that year's New Jersey blueberry harvest and added these directly to stainless. We racked the blackberry spontaneously fermented beer to cold soak on the skins and juices of the blueberries for a short period of time before racking back to oak for refermentation and conditioning. At bottling, this blend had an average age of 27 months and has been conditioning since its bottling in early 2022. Blackberry & Blueberry | 2021 Harvest pours a deep purple color with ruby highlights and a rocky pink foam. This beer pushes aromatics of jammy blueberries and overripe blackberries supported by a malolactic creaminess, making this reminiscent of a full-bodied California Cabernet Sauvignon.

A portion of this blend was aged in a cognac cask. During the Fall of 2021, our team picked up a harvest of whole-cluster Chardonnay grapes, destemmed and added these directly to oak along with the blend at a rate of 5.5 lbs per gallon. At bottling, this blend had an average age of 45 months and has been conditioning since its bottling in 2023. Chardonnay | 2021 Harvest pours a bright yellow with champagne-like carbonation, aromatics of white wine grapes, orange citrus and limestone with flavor notes of lemon sherbet.

Elderflower | 2021 Harvest

Elderflower | 2021 Harvest is a blend of traditionally brewed spontaneously fermented beers across three brewing seasons, including a portion from a recipe using a higher hopping rate. In late May of 2021, our team harvested European elderflower from a local New Jersey farm, then let the elderflower soak cold in the beer for a single night before being racked back to oak for extended conditioning. At the time of bottling, this blend had an average age of 33 months and has been conditioning since its bottling in early 2022. Elderflower | 2021 Harvest pours a vibrant yellow with a rocky white foam. It pushes vibrant floral aromatics and notes of sweet lychee and apricots. The acidity is light and elevates a clean lemon tart flavor profile.

Golden Raspberry | 2021 Harvest is a blend of traditionally brewed spontaneously fermented beers across three brewing seasons, with the oldest portion brewed in the Fall of 2018. One portion of this blend was brewed to a higher gravity and another portion was aged in a cognac cask. In early October, we received our harvest of beautifully ripe Anne Golden Raspberries, which were added immediately to oak with the blend at a rate of over 3.5 lbs per gallon. At bottling, this blend had an average age of 35 months and has been conditioning since its bottling in 2022. Golden Raspberry | 2021 pours a bright yellow with aromatics of fresh, ripe raspberries, a stonefruit complexity and a touch of orange cognac flavor supported by lemon sherbet and fruit leather

Montmorency Cherry | 2021 Harvest

Montmorency Cherry | 2021 Harvest blend was from four different batches over three brewing seasons. This three year blend was from traditional batches brewed in Fall of 2019 and Spring of 2020; a high gravity batch brewed in Spring of 2021 and a more heavily wheated batch brewed in the Spring of 2019. The blend was racked on Pennsylvania Montmorency tart cherries at a rate of 6lbs per gallon and allowed to referment in wine barrels. It was bottled with young spontaneous in April of 2022. It pours deep rosé with notes of freshly baked cherry pie, graham cracker crust, and baking spice.
