Bourbon Barrel Aged Mexican Dessert returns today. 2025 Bourbon Barrel Aged Mexican Dessert is our 13.9% blend of Imperial Milk Porters brewed with Vermont maple syrup and lactose, aged in Heaven Hill 8-Year Bourbon and Rye Whiskey barrels. It was conditioned on cacao nibs from Haiti and Ghana, graham crackers, toasted coconut, cinnamon, and Ancho chilies. Bourbon Barrel Aged Mexican Dessert pours jet black with a mocha foam head, with layers of s’mores, toasted coconut, dark chocolate, maple, and subtle oak.

Double Barrel-Aged Imperial Stout
13.2% ABV
Tomorrow Is Already Here was first aged for 30 months in a blend of Weller, Old Fitzgerald, Kentucky Owl and Woodford Double Oaked Bourbon barrels before being double barrel-aged in a Soju barrel from our friends at 3BR Distillery. Soju is a distilled Korean spirit traditionally made from rice. The Soju barrel adds a delicate spirit character that enhances the beer’s chocolate depth while contributing subtle notes of soft sweetness and a clean, rice-driven dryness. Tomorrow Is Already Here pours a dense, deep chocolate color with elegant chocolate and woody spirit aromatics, and flavors of chocolate covered raisins and malted milk balls. The drinking experience is complete with a smooth bourbon character and a dense chocolate syrup mouthfeel.

Bourbon Barrel Aged Holy Nights, our 13.4% Bourbon Barrel-Aged Imperial Stout with coconut, coffee, cacao and vanilla, was aged for an average of 20 months in a blend of Heaven Hill Bourbon barrels. This beer was then conditioned on coconut, dark roast coffee from @rookcoffee, cacao nibs from Haiti and Ghana and vanilla beans from Madagascar, the Congo, Uganda and Papua New Guinea. Bourbon Barrel Aged Holy Nights pours pitch black with sweet and complex notes of toasted coconut, rich dark chocolate, bold coffee roast, and layers of warm vanilla. The extended time in Heaven Hill barrels adds depth and refinement with bourbon warmth and soft caramel undertones. Rum Double Barrel Aged Dripping Maple is our newest 13.6% Double Barrel-Aged Imperial Stout brewed with maple and conditioned on cinnamon and vanilla. Rum Double Barrel Aged Dripping Maple began as an Imperial Stout brewed with maple syrup aged for 12 months in Heaven Hill Elijah Craig 8-Year Bourbon barrels. This maple Imperial Stout was then double barreled for an additional 11 months in Caribbean rum barrels to amplify sweetness and add complexity. Finally, this beer was conditioned on Korintje cinnamon and Madagascar vanilla beans. Rum Double Barrel Aged Dripping Maple pours dark black with a velvety thick mouthfeel. It pushes complex notes of brown sugar, cinnamon, soft vanilla, and a depth of maple flavor.

Dripping Maple, our award-winning 12.7% Bourbon Barrel-Aged Imperial Stout brewed with Vermont maple syrup, cinnamon, and vanilla, is coming back to the brewery tomorrow for Black Friday. This year’s blend was brewed with maple syrup and spent an average of 35 months aging in Heaven Hill Elijah Craig 8-Year Bourbon barrels. Dripping Maple was conditioned on Korintje cinnamon and vanilla beans from Madagascar, Ecuador, and Papua New Guinea, layering together flavors reminiscent of bourbon-soaked French toast. Rich and full-bodied, Dripping Maple pours jet black with notes of burnt caramel and maple, leading with flavors of sweet cinnamon rolls and creamy vanilla.

Our 13.4% Imperial Stout aged in bourbon barrels. The extended aging allowed seasonal temperature fluctuations in the barrels to draw bold flavors from the oak that can only develop with time. The heat of the bourbon gave way to a subtle caramel sweetness, and the bold, sharp edges of the roasted malt mellowed and married with flavors of vanilla and oak.

Blend of Barrel-Aged Imperial Stouts & Porters
13.6% ABV
Washed Ashore was aged in Heaven Hill Old Fitzgerald and Wild Turkey 10-Year Russel's Reserve Bourbon Barrels for an average of 42 months. We conditioned the beer on toasted coconut and cacao from Ghana and Uganda to produce a flavor profile reminiscent of a favorite sweet treat. Washed Shore pours jet black and pushes delicious flavor notes of dark chocolate, toasted coconut, sweet caramel, and a light vanilla character.

Double Barrel Aged Tide & Timber, our 13.6% Double Barrel-Aged Imperial Stout brewed with maple & molasses, is a collaboration with our friends over Esker Hart. We released the original Tide & Timber collaboration in 2024––a Barrel-Aged Imperial Stout brewed with a blend of Maris Otter, British and German specialty malts with a massive dose of maple syrup and molasses. Tide & Timber was aged for a total of 23 months in both Heaven Hill Bourbon and Woodford Reserve Wheat Whiskey barrels before blending. We took that beer and double barreled it for an additional 12 months in rare Old Forester Birthday Bourbon barrels to create Double Barrel Aged Tide & Timber. Double Barrel Aged Tide & Timber pours black with a silky mouthfeel and leads with rich notes of dark chocolate, brownie batter, and maple sweetness. Flavors of caramelized sugar, toasted oak, and vanilla carry into its luxurious finish.

Bourbon Barrel Aged Sunday Brunch is a blend of Imperial Milk Porters brewed with maple aged for an average of 31 months, then racked into a blend of Heaven Hill Old Fitzgerald and Buffalo Trace Blanton’s Bourbon barrels. This beer was then conditioned on a blend of Rook dark roast coffee and cinnamon. Bourbon Barrel Aged Sunday Brunch presents a dark chocolate color in the glass. Up front, this beer offers sweet maple and roasted coffee aromatics, supported by notes of cinnamon. The barrel character adds depth, bringing soft notes of vanilla, toasted coconut, and oak to round out the finish.

Double Barrel Aged Unmarked Jetty was aged in a Heaven Hill Elijah Craig Toasted Oak Bourbon Barrel for a total of 25 months before being hand-selected to age in an Amburana wood barrel for an additional 4 months. This Double Barrel-Aged Imperial Stout pours black with a light mocha foam. It pushes aromas of cinnamon raisin, French toast, light maple syrup and a touch of French vanilla coffee supported by complex baking spice notes from extended barrel-aging.

5114 is a blend of Imperial Stouts and Maple Imperial Milk Stouts, aged for an average of 26 months in Buffalo Trace Weller Bourbon, Elijah Craig Toasted Bourbon, and Heaven Hill Rye Whiskey barrels. After blending, it was then conditioned on wild Thai bananas, toasted organic coconut, and a blend of West Papua and Papua New Guinea vanilla beans. 5114 pours jet black and is layered with notes of coconut cream pie, bananas Foster, and chocolate caramel. A decadent and deeply expressive stout meant for celebrating today or enjoying in the future.

Blend of Bourbon Barrel-Aged Ales

5110 began as a blend of Bourbon Barrel-Aged Ales aged for 28 months in Buffalo Trace, Elijah Craig, Stagg Jr, and Heaven Hill Bourbon barrels, with a small portion of our past Anniversary Ales. From there, it was double barrel-aged in a freshly emptied Elijah Craig 8-Year Bourbon barrel that previously held Vermont maple syrup, bringing the final average age to 40 months. The result is rich and warming with layered notes of maple-glazed pecans, bourbon-soaked dates, and toasted oak. 5110 pours jet black and blends all the intricacies of our past barrel-aged Anniversary Ales with all the complexities we developed over the last 14 years from our current barrel-aging program.

5110 began as a blend of Bourbon Barrel-Aged Ales aged for 28 months in Buffalo Trace, Elijah Craig, Stagg Jr, and Heaven Hill Bourbon barrels, with a small portion of our past Anniversary Ales. This blend was then double barrel-aged in a single Old Forester Birthday Bourbon barrel for an additional year of aging, bringing the average age to 40 months. The result is a beautifully complex ale with concentrated notes of fig, toffee, vanilla bourbon, and deep oak expression. 5110 pours jet black and blends all the intricacies of our past barrel-aged Anniversary Ales with all the complexities we developed over the last 14 years from our current barrel-aging program.

Wooden Cleat (2025)
Barrel-Aged Barleywine
12.6% ABV
Wooden Cleat is a blend of high gravity barleywines that underwent extensive aging in a blend of Heaven Hill Elijah Craig 8-Year bourbon and Buffalo Trace bourbon barrels. This recipe used entirely Chevalier heritage barley in the grist and underwent an intense double mash procedure followed by a 12-hour boil. After fermentation, this beer was laid to rest in oak barrels for approximately 24 months. It was then racked out of oak and conditioned in stainless for another month prior to bottling. Wooden Cleat pours a dark amber color with chestnut brown highlights. This beer brings rich multi-layered malt flavors with notes of molasses, dried dark fruits, and an intense caramelized sugar profile from the extended boil.

This year's vintage of Vengeful Heart comes from a single barrel of barleywine aged for a year in Heaven Hill Select 14 Year Bourbon, chosen for its notably round mouthfeel and pleasant fruity profile. We then took this beer and dry hopped it with both Simcoe and Cascade to layer in notes of piney citrus and fruity undertones. Vengeful Heart pours a dark brown with intertwined aromatics of stewed plums and burnt caramel along with notes of stonefruit and grapefruit.

Maple Double Barrel Dripping Maple was aged for 32 months in a Buffalo Trace Stagg Jr. Bourbon barrel before being double barrel aged for an additional 12 months in a Heaven Hill Elijah Craig 8-Year Bourbon barrel that previously held maple syrup. After conditioning on Korintje cinnamon and Madagascar vanilla beans, Maple Double Barrel Dripping Maple boasts notes of brown butter toffee cake, cinnamon sugar donuts and French toast drowned in maple syrup.

2024 Dripping Maple was aged in a blend of Buffalo Trace Weller Bourbon and George Dickel 16-Year Bourbon with an average age of 22 months. Dripping Maple was then conditioned on Korintje cinnamon and Madagascar vanilla beans to develop bold flavors of bourbon-drenched French Toast, burnt caramel and sweet cinnamon rolls.

The Honey Eater
Double Barrel-Aged Barleywine

The Honey Eater was brewed in collaboration with our friends at 3BR Distillery. This beer was selected from a batch of long-boiled barleywine aged for 29 months in a single Buffalo Trace Stagg Jr. barrel before being double barreled in a honey spirit cask from 3BR. The distillate previously aged in the honey barrel came from Miombo Tanzanian honey that was fermented, distilled and then aged in oak for six months. The Honey Eater pours mahogany with a luxuriously thick mouthfeel and aromatics of toffee, caramel and dark stewed fruits. This beer finishes with subtle notes of honey jack and a light floral component.
