Inspired by an early afternoon brunch, this variant was brewed with maple syrup and conditioned on cinnamon and a blend of dark roast coffees.

Blend of Barrel-Aged Stouts

This year the second bottle is 3288, a Barrel-Aged German Chocolate Imperial Stout. This complex blend of hand-picked barrel-aged imperial stouts, with an average barrel residence of over 22 months, was conditioned it on Madagascar bourbon vanilla beans, cacao nibs from Ghana, Uganda, and Ecuador, and freshly toasted pecans and coconut. The character from the barrels blends perfectly with the sweet chocolate, creamy vanilla and toast from the nuts to create a rich and decadent beer.

Bourbon Barrel-Aged Imperial Stout

Our 2023 A Night To End All Dawns base is our award-winning blend of A Night To End All Dawns Imperial Stout barrels ranging from our base A Night To End All Dawns recipe to our double-mashed and extended-boil A Night To End All Dawns recipes, all aged in carefully selected bourbon whiskey barrels and then blended. The average age of this blend is 20 months in oak and includes Weller, Elijah Craig, Wild Turkey 10-Year Russel’s Reserve, and Old Fitzgerald barrels, among others. This beer pours a dark black color with a dark mocha head and has a refined classic dark malt profile balancing chocolate with a touch of roast and features a variety of deep and complex full rounded bourbon notes, light vanilla spice, and fruity dark chocolate with a textured but balanced mouthfeel and overall profile.

Double Bourbon Barrel-Aged Imperial Stout

To celebrate the 10th Anniversary of our first A Night to End All Dawns release in 2013 we are releasing this special, limited edition bottle. A Night To End All Dawns is our massive bourbon barrel-aged Imperial Stout. It was one of the first beers we brewed in 2011 when we opened and it has been a special part of our history. Over the years A Night To End All Dawns has received numerous national and international awards and has become a recognized part of our brewery. To select this very special release, the team went deep into the barrel cellar to select a blend that represents the past, present and future of this beer. 10th Anniversary A Night To End All Dawns is a Double Bourbon Barrel-Aged Imperial Stout. After sampling various barrels, we selected a highly regarded heavily wheated Imperial Stout that was aged in a Buffalo Trace Weller 12-year bourbon barrel for 15 months. That single barrel was then racked into a Heaven Hill Old Fitzgerald 19-year bourbon barrel for 10 months to finish. This single barrel resulted in 100 bottles of this very special 10th Anniversary A Night To End All Dawns.

A select blend of A Night To End All Dawns barrels including Widow Jane George Dickel 12-Year, Woodford Reserve Double Oak, and Elijah Craig Bourbon barrels with an average age of 20 months. This portion of the blend was then further conditioned on Wild Thai bananas, vanilla beans from Madagascar, and a blend of Maple & Cinnamon. Bananas Fosters French Toast pours with an attractive dark black mocha colored foam head carrying forth notes of bourbon-drenched cinnamon French toast, light chocolatey banana aromatics, and a textured mouthfeel combining for a bourbon-rich decadent yet balanced experience.

Barrel-Aged Imperial Stout

14.1% ABV

This annual year-end release of Tomorrow is Already Here is an Imperial Stout recipe which began with an intensive double-mashing and extended-boiling procedure with a small portion of maple syrup added to the hot side. The blend was then aged for 14 months in Heaven Hill Bourbon barrels. Tomorrow Is Already Here features notes reminiscent of burnt brownie edges, rich chocolate nougat, and fruity soft caramelized citrus-chocolate on top of a big textured and plush mouthfeel all combining for an intense yet balanced composition.

Bourbon Barrel-Aged Mexican Brunch (2023)

Barrel-Aged Imperial Milk Porter

12.7% ABV

Barrel-Aged Mexican Brunch is our 12.7% Imperial Milk Porter brewed with maple syrup and lactose, aged in bourbon barrels then conditioned on cinnamon, coffee, cacao nibs, ancho chilies and lactose. This year's release came from a blend of Imperial Milk Porters aged in Old Fitzgerald, Heaven Hill and Woodford Reserve Double Oaked Bourbon barrels. The blend was aged for an average of 16 months before conditioning and release. Barrel-Aged Mexican Brunch pours black with a mocha head, with aromatics of chocolate and coffee upfront supported by notes of vanilla cream and caramel from the extended barrel aging. Cinnamon, maple and chilies all play supporting roles to round out this fantastic Mexican Chocolate-inspired beer.

This portion of the blend was then further conditioned on a selection of cacao varieties from Ghana, Haiti, Uganda, and the Dominican Republic at our highest rate. Quadruple Chocolate pours a dark mocha color and displays a multitude of rich and decadent bourbon and chocolate notes including chocolate sponge cake, fudge, and mousse creating a heavy chocolate complexity in a full, balanced approach.

A select blend of A Night To End All Dawns barrels including Widow Jane George Dickel 12-Year, Woodford Reserve Double Oak, and Elijah Craig Bourbon barrels with an average age of 20 months. This portion of the blend was then further conditioned on a heavy dose of toasted coconut and a unique blend of vanilla beans from the Cook Islands, Comoros, and Madagascar, before being finished with premium Bali roast coffee from our friends at Rook. This beer pours a dark roasty mocha color with balanced round flavors and aromatic notes of chocolate coconut cookies, nutty praline, and creamy sweet vanilla spice with complimentary coffee undertones and a velvety smooth mouthfeel and background bourbon aromatics.

A Night To End All Dawns—Amburana Double Barrel is a 12.2% blend of Barrel-aged Imperial Stouts. It began with a blend of Imperial Stouts that had been aged for an average of 18 months in Weller Bourbon and Elijah Craig 12-year Bourbon barrels before being finished in a single Amburana wood cask for an additional three months. Well worth the wait, A Night To End All Dawns Amburana Double Barrel pours a dense black with aromatics of homemade vanilla frosting, Cinnabon and chocolate brownies, supported by a soft and smooth chocolate profile.

Old Rip Van Winkle Double Barrel-Aged A Night to End All Dawns is a select blend of our richest Imperial Stouts. ⁣ ⁣ After tasting through our cellar, we selected a barrel blend aged for over 21 months from both Willett Bourbon and Buffalo Trace Eagle Rare Bourbon barrels.⁣ ⁣ This blend was then racked into Buffalo Trace Old Rip Van Winkle 10 Year Bourbon barrels to be finished for an additional 11 months.⁣ ⁣ The aging of this beer through nearly four seasons in some of the most highly acclaimed bourbon barrels has created incredible depth and complexity. ⁣ ⁣ Dense milk chocolate aromatics and notes of caramel, malted milk candies, baker's chocolate and crisp brownie edges compliment the refined well-aged bourbon profile.⁣

Bourbon Barrel-Aged Imperial Stout

15.6% ABV

This 15.6% blend of massive barrel-aged imperial stouts first spent 21 months in Willet Bourbon and Rye Barrels. This initial extended aging allowed seasonal temperature fluctuations in the barrels to draw bold flavors from the oak that carries notes of vanilla and coconut. ⁣ ⁣ It was then racked into Alba Syrah Red Wine Barrels for 11 months, introducing notes of dark fruit, raspberry, and cherries. ⁣ ⁣ Finally, this blend went into Chocolate Liqueur casks to finish for an additional four months before extended cold conditioning prior to release. ⁣ ⁣ This massively flavorful triple barrel aged imperial stout was several years in the making. It brings aromas of chocolate covered cherries and complex flavors of coffee, chocolate, dark fruit, coconut, and oak with a surprisingly drinkable medium body from extended barrel-aging. A great beer to end the year. ⁣
