Rhubarb & Nectarine | 2021 Harvest was blended from a base of cognac barrel-aged spontaneously fermented beers from the 2019/2020 brewing season. In early July 2021, our team received several hundred pounds of Rhubarb from an over 100-year-old local patch and added them directly to oak with the blend. In early September, we received several hundred pounds of Yellow Nectarines which were then also added as a complement to the blend. The overall fruiting rate of this beer came in at over 6 lbs per gallons. At bottling, this blend had an average age of 27 months and has been conditioning since its bottling in 2022. Rhubarb & Nectarine | 2021 Harvest pours peachy yellow with aromatics of jammy vanilla, deep apricot stonefruit perfume, spritzy high carbonation, fruit syrup and a full mouthfeel supported by a high minerality and low acidity..

Rhubarb | 2020 Harvest came from a single oak barrel of beer brewed with our aging recipe. For this recipe, which we always brew in the Spring, we increase the raw wheat proportion to 50% of the total grain along with a slight increase in the aged leaf hopping rate. The result tends to be a bit more aggressively flavorful in its youth but mellows elegantly with time. For Rhubarb | 2020 Harvest, we pulled this barrel at 15 months and racked it to age on over 4 lbs per gallon of freshly harvested and split rhubarb stalks in oak for an additional 8 months. Finally, to elevate the nuance of both the base beer and the harvest, we conditioned this beer for an additional 15 months in bottle prior to release. It pours a golden hue and pushes aromatics of sweet vanilla, pie crust, grapefruit and tangerine and drinks with a balanced acidity reminiscent of apricots, strawberries, and lively carbonation.

Rhubarb | 2021 Harvest is a blend of two traditionally brewed spontaneously fermented beers brewed in the Fall of 2019 and Spring of 2020. In the spring, our team made the trip to get rhubarb from a 105-year-old patch in New Jersey. The rhubarb stalks were split and added directly to oak at a rate of over 4 lbs per gallon. At bottling, this beer had an average age of 26 months. It has been conditioning with young spontaneously fermented beer since its bottling in 2022. Rhubarb | 2021 pours a burnt yellow color with a firm white foam, with aromatics of peach and flavor notes of fruit cup and lemon meringue.

Riders To The Sea
India Pale Ale

Riders To The Sea is built on a base of Pilsner, oats, wheat, and a touch of Munich malts for a soft and structured body with a lasting haze. This refreshing IPA is hopped on the hot side and dry-hop with Citra and Nelson, with a finishing touch of Nelson Hop Kief. The result is a mix of lime, grapefruit, and gooseberry notes.

Riesling | 2021 Harvest is a blend of traditionally brewed spontaneously fermented beers across three brewing seasons, with the oldest portion brewed in the Spring of 2018. In the Fall of 2021, our team picked up freshly harvested whole cluster New Jersey Riesling Grapes, which were then destemmed and added directly to oak with the blend at a rate of over 6.5 lbs per gallon. At bottling, this blend had an average age of 45 months and has been conditioning since its bottling in 2023. Riesling | 2021 pours a clear amber yellow, aromatics of sweet orange blossom honey, waxy grape skins, white raisin and a firm alcohol warmth

Riomaggiore
Italian-Style Pilsner
5.2% ABV
Riomaggiore, our 5.2% Italian-style Pilsner, is brewed with a simple malt bill consisting of Eraclea malt from Italy’s Adriatic coast. Riomaggiore was kettle-hopped with Spalt Select and Hallertau Mittlefruh from Seitz Farms in Germany, fermented cold, gently dry-hopped with more Spalt Select and Hallertau Mittlefruh. Riomaggiore was spunded prior to dry-hopping then lagered for eight weeks for packaging. Riomaggiore is an extremely drinkable, crisp pilsner with notes of honey, lemon, and floral noble hop character, inspired by a summer spent on the Italian coast.

Royal Lager, our 4.0% American Lager, is brewed with Pilsner malt and gently hopped with Saaz. This beer was spunded for natural carbonation and lagered for over a month before packaging. Rum Double Barrel Aged Dripping Maple (2025)
Double Barrel-Aged Imperial Stout

Rum Double Barrel Aged Dripping Maple is our newest 13.6% Double Barrel-Aged Imperial Stout brewed with maple and conditioned on cinnamon and vanilla. Rum Double Barrel Aged Dripping Maple began as an Imperial Stout brewed with maple syrup aged for 12 months in Heaven Hill Elijah Craig 8-Year Bourbon barrels. This maple Imperial Stout was then double barreled for an additional 11 months in Caribbean rum barrels to amplify sweetness and add complexity. Finally, this beer was conditioned on Korintje cinnamon and Madagascar vanilla beans. Rum Double Barrel Aged Dripping Maple pours dark black with a velvety thick mouthfeel. It pushes complex notes of brown sugar, cinnamon, soft vanilla, and a depth of maple flavor.

Imperial IPA

SBX is our 8.4% Imperial IPA family member of our award-winning Pale Ale, Sneakbox. This delicious beer is heavily hopped with Citra in the whirlpool just like Sneakbox. We then added a dose of Galaxy and Citra to this hoppy beer for extra tropical notes of mango and stone fruit, balanced with hints of pine and a subtle dank edge.

2022 Scotch Double Barrel-Aged Picture In Reverse is our 16.1% blend of barleywines aged for 27 months in Willett Bourbon barrels that we picked up directly from the distillery in Kentucky. We selected a few of our best barrels and double barrel aged it in non-peated Scotch Whiskey casks.

Sea Of Grass
India Pale Ale

Sea Of Grass is hopped with a blend of Citra, Chinook and Simcoe in the Whirlpool, then dry-hopped with even more Citra, Chinook and Simcoe. Sea Of Grass was fermented with a clean, neutral yeast strain, allowing the hops to shine. Sea Of Grass pushes notes of mango and stone fruit supported by undertones of grapefruit and resin.

India Pale Ale

Sea Summit is our 6.8% West Coast-Inspired IPA brewed with a blend of Pilsner, wheat, dextrine and light crystal malts. It is hopped plentifully in the kettle and whirlpool with a blend of Centennial, Simcoe and Wimea hops before being fermented dry with a classic west coast yeast. Sea Summit is then dry hopped with Simcoe, Waimea, Citra and Centennial. Sea Summit pours a pale yellow color with a light natural haze. It has aromatics of citron, mangoes and an underlying fresh pine profile. Crisp and Clean.

Second Reef, our 8.6% Imperial IPA in our Reef series of beers, is hopped with Citra in the whirlpool, and heavily dry-hopped with Citra, Mosaic, Galaxy and Strata. This Imperial IPA drinks with ripe aromatics of mango, lychee, pine and juicy fruit.

Second | Anniversary Blend

Our Second Anniversary release is something we have been building towards since we started Field & Oak in early 2018. From the beginning, Field & Oak has drawn its inspiration from traditional Lambic brewing and blending techniques. For our Second Anniversary release we took inspiration from traditional Gueuze production. Our Second Anniversary is a blend of one, two and three year spontaneous beers and our first release of a three year blend. During the Summer of 2021, we tasted through our barrel cellar to select the best barrels from each of the past three seasons. Second pours a burnt orange color with a rocky white head and beautifully effervescent carbonation. Aromatics of grapefruit zest, bright lemon and citrus are supported by an underlying floral profile with well-integrated wood tannins that highlight a slightly acidic finish.

Secret Mezzanine is loaded with Simcoe and some of our other favorite hops, giving this hazy pale orange pint a dank pine and citrus flavor profile.

Shell Game (2019)
Rye Barrel-Aged Imperial Stout
13.8% ABV
Brewed in collaboration with Jackie O's, Shell Game is our 13.8% Rye Imperial Stout brewed with brown sugar, hand-toasted almonds, pumpkin and sunflower seeds that was aged in Rye Whiskey barrels for over a year. After being racked out of barrels we conditioned the beer on coconut and granola. The final product is a rich, full bodied and complex Barrel-Aged Imperial Stout with multiple layers of flavor.

Shell King is the big brother to our Hoppy Session Ale, Tiny Shells. It’s hopped in the whirlpool with Simcoe and Citra and dry-hopped with a combination of Chinook, Simcoe, Waimea, and Amarillo. Shell King is packed with all the crushable passion fruit, orange, and grapefruit notes you expect from Tiny Shells.

Shifting Squall
Imperial Stout
9.0% ABV
Shifting Squall is brewed with a robust grist composition featuring choice English Golden Promise, Oats, Chocolate and Roast malts and hopped with Cascade, Chinook, and Bravo in the Whirlpool. This beer underwent a double-mash process which involved two separate mashes collected together and boiled for an extended period, allowing for further development of flavor. Shifting Squall pours jet black with a cascading mocha tan head and presents a complex flavor profile of fruity dark malts, chocolate-citrus, baker’s chocolate, and roasty burnt brownie edges rounded out by a pleasant resinous hop bitterness.

In late July of 2020, we received a massive harvest of yellow New Jersey grown Shiro plums from one of our farm friends. We selected a single oak barrel of young spontaneous beer to blend at a 1:1 ratio for refermentation. After squishing the overripe fruit by hand, the beer was allowed to rest on the fruit and absorb the flavors of the plum juice, skins and pits. After refermentation the blend rested on the fruit for an additional 12 months prior to bottling. After bottle conditioning for an additional 16 months, Shiro Plum | 2020 Harvest has an average age of 37 months. Shiro Plum | 2020 Harvest pours a hazy pale blonde with lively carbonation that drives a sturdy white foam. Aromatics of plum skin and a light salinity, a balancing honeysuckle vanilla with notes of rainier cherries.

Shiro Plum | 2021 Harvest

Shiro Plum | 2021 Harvest is a blend of traditionally brewed spontaneously fermented beers from two batches from the 2018 brewing season; one batch containing New Jersey blueberry blossom honey, and another aged in a chestnut puncheon. In August of 2021, our team picked up that year's New Jersey Shiro plum harvest. We added them whole, directly through the head of a barrel at a rate of over 8 lbs per gallon along with the blend for refermentation. At the time of bottling, this blend had an average age of 30 months and has been conditioning since its bottling in early 2022. Shiro Plum | 2021 Harvest pours bright yellow with orange highlights and a densely creamy foam with aromatics of plums and apricots. A firm but pleasant acidity supports the nuances of plum skins, pineapple upside-down cake and a touch of fermentation funk.
