Spontaneous
Black Currant | 2021 Harvest is a three-year blend of traditional spontaneous beers brewed in the Spring 2018, Spring 2020, and Spring 2021 brewing seasons. Our team picked up black currants from Phillips Farms in Milford, NJ and added them directly into barrels containing the three-year blend which had an average age of 17 months at the time of fruiting. After aging on the currants for an additional 6 months we bottled and laid the beer down for an additional 12 months of conditioning. Upon release, Black Currant ’21 Harvest will be 29 months old. This beer pours a very clear burnt red/crimson color with strong off-white foam and carries a unique citrusy and piney overall character better described as twiggy or woodsy with light citrus and funk. Black Currant has a good tannin fruit profile with a clean medium acidity presenting a nicely balanced and unique overall character.

Bière de Noël | Winter 2023
Spontaneous
Bière de Nöel | Winter 2023 is a special three-year Congac-aged Spontaneous Blend. The oldest component of this special blend was from a wheat-heavy batch brewed during our Spring 2018 season that was fermented in a 600L Pineau des Charentes cask. The two-year component was from a traditional mash brew during the Spring of 2020 that was fermented in a 600L Cognac cask, while the youngest of the three was brewed with New Jersey Blueberry Blossom Honey during our Fall of 2020 brew season and fermented in a 450L Pineau des Charentes cask. The blend of these three spontaneous beers, using all New Jersey grown malts and some honey, was laid to rest in a Cognac cask for seven months prior to bottling. In March 2022, we blended back a small portion of young spontaneous beer and bottled. Bière de Nöel had an average age of 23 months at bottling. This blend pours with a highly carbonated mousse-like foam head with a burnt golden orange color. Malus (2023)
Apple Cider Ale
10.0% ABV
Malus, our 10.0% Apple Cider Ale, was the first beer we bottled back in 2012 and has since become a seasonal favorite. Malus is brewed with a complex malt bill of European Pilsner, wheat and a blend of light and dark caramel malts. We sourced locally pressed fresh apple cider from our friends Delicious Orchards that we boiled down and reduced into a syrup to replace the dark candi sugar we typically use in this style of beer. We used Czech Saaz hops during the boil to balance out the malt sweetness and provide a spicy, floral note to compliment the apple cider. Finally we add cinnamon, nutmeg, clove and allspice to the whirlpool to add a subtle spice character. Malus pours with a deep ruby hue and a pleasant ester profile of dark fruit, bubble gum and spice. The combination of reduced cider and spices brings flavors of mulled apple cider, plum and dried cherry with a subtle background holiday spice. The perfect beer to pair with the holidays and family.
