Old Rip Van Winkle Double Barrel-Aged A Night to End All Dawns is a select blend of our richest Imperial Stouts. ⁣ ⁣ After tasting through our cellar, we selected a barrel blend aged for over 21 months from both Willett Bourbon and Buffalo Trace Eagle Rare Bourbon barrels.⁣ ⁣ This blend was then racked into Buffalo Trace Old Rip Van Winkle 10 Year Bourbon barrels to be finished for an additional 11 months.⁣ ⁣ The aging of this beer through nearly four seasons in some of the most highly acclaimed bourbon barrels has created incredible depth and complexity. ⁣ ⁣ Dense milk chocolate aromatics and notes of caramel, malted milk candies, baker's chocolate and crisp brownie edges compliment the refined well-aged bourbon profile.⁣

Inspired by a traditional Italian coffee dessert, this variant was conditioned on Madagascar & Mexican vanilla beans and dark roasted Rook coffee.

Inspired by a decadent breakfast treat, this variant was conditioned on brûléed bananas with brown sugar, maple and Korintje cinnamon.

Bourbon Barrel-Aged Imperial Stout

15.6% ABV

This 15.6% blend of massive barrel-aged imperial stouts first spent 21 months in Willet Bourbon and Rye Barrels. This initial extended aging allowed seasonal temperature fluctuations in the barrels to draw bold flavors from the oak that carries notes of vanilla and coconut. ⁣ ⁣ It was then racked into Alba Syrah Red Wine Barrels for 11 months, introducing notes of dark fruit, raspberry, and cherries. ⁣ ⁣ Finally, this blend went into Chocolate Liqueur casks to finish for an additional four months before extended cold conditioning prior to release. ⁣ ⁣ This massively flavorful triple barrel aged imperial stout was several years in the making. It brings aromas of chocolate covered cherries and complex flavors of coffee, chocolate, dark fruit, coconut, and oak with a surprisingly drinkable medium body from extended barrel-aging. A great beer to end the year. ⁣

The heat of the bourbon gave way to subtle caramel sweetness from the oak married with the bold flavors from two types of chocolate.

The extended aging allowed seasonal temperature fluctuations in the barrels to draw bold flavors from the oak that can only develop with time. The heat of the bourbon gave way to subtle caramel sweetness from the oak married with the flavors of oak and vanilla.

Shiro Plum | 2021 Harvest

Spontaneous

Shiro Plum | 2021 Harvest is a blend of traditionally brewed spontaneously fermented beers from two batches from the 2018 brewing season; one batch containing New Jersey blueberry blossom honey, and another aged in a chestnut puncheon. In August of 2021, our team picked up that year's New Jersey Shiro plum harvest. We added them whole, directly through the head of a barrel at a rate of over 8 lbs per gallon along with the blend for refermentation. At the time of bottling, this blend had an average age of 30 months and has been conditioning since its bottling in early 2022. Shiro Plum | 2021 Harvest pours bright yellow with orange highlights and a densely creamy foam with aromatics of plums and apricots. A firm but pleasant acidity supports the nuances of plum skins, pineapple upside-down cake and a touch of fermentation funk.

Blackberry & Blueberry | 2021 Harvest

Spontaneous

Blackberry & Blueberry | 2021 Harvest is a blend of traditionally brewed spontaneously fermented beers from a single brewing season: one batch containing New Jersey blueberry blossom honey, and another aged in a chestnut puncheon. In August of 2021, we picked up our harvest of New Jersey grown blackberries and added them directly to oak with the blend for refermentation. At the end of summer, we received that year's New Jersey blueberry harvest and added these directly to stainless. We racked the blackberry spontaneously fermented beer to cold soak on the skins and juices of the blueberries for a short period of time before racking back to oak for refermentation and conditioning. At bottling, this blend had an average age of 27 months and has been conditioning since its bottling in early 2022. Blackberry & Blueberry | 2021 Harvest pours a deep purple color with ruby highlights and a rocky pink foam. This beer pushes aromatics of jammy blueberries and overripe blackberries supported by a malolactic creaminess, making this reminiscent of a full-bodied California Cabernet Sauvignon.​

Wave of Sound

India Pale Ale

7.7% ABV

Wave Of Sound is our 7.7% IPA collaboration with Brix City Brewing brewed with all locally sourced malts—grown and malted at Rabbit Hill Malthouse in Shiloh, NJ. It was brewed with a blend of Pilsner, Chitted Barley, Oats, and Wheat and hopped with Idaho 7 and Motueka in the whirlpool followed by a heavy dose of Citra, Nectaron, and Motueka in the dry hop. Wave of Sound pours with a very dense hazy straw appearance and presents a bright stone fruity hop expression with passionfruit, light orange zest, and light dank undertones.

Pumkpin Chai Latte

India Pale Ale

7.3% ABV

Pumpkin Chai Latte is our 7.3% IPA brewed with pumpkin in the mash and a small amount of lactose in the kettle to add body and sweetness. Finally it was conditioned on Chai tea, cinnamon, clove, ginger and nutmeg. This fall-spiced IPA pours a light orange pumpkin color with a slight haze and perfectly combines a creamy citrusy hop aromatic with subtle flavors of pumpkin pie spice, black Chai tea, and cinnamon.

First Reef

India Pale Ale

7.0% ABV

First Reef was hopped with Amarillo in the whirlpool and dry-hopped with Citra, Amarillo, and Galaxy. First Reef pours with a dense haze and delivers a clean hop-forward aroma and flavor expression of sticky sweet fruit, citrus, peach gummies, and pineapple balanced with light bitterness.

Eastern Sky

Imperial IPA

8.0% ABV

Eastern Sky was hopped with Nectaron and Citra in the whirlpool and dry-hopped with Citra, Sabro, and Galaxy. This beer pours a hazy orange color, with a hop-forward flavor and aroma profile with notes of citrus fruit, candied pineapple and orange rind with a clean finish.

Double Dry Hopped Galaxy Head High

Imperial IPA

8.2% ABV

Double Dry-Hopped Galaxy Head High is hopped with all the same great hops, plus an additional round of dry-hopping with one of our favorite hops—Australian Galaxy.⁣ ⁣ The addition of Galaxy adds more stone fruit, juicy peach, passionfruit and citrus flavors.⁣

Standing Tide

India Pale Ale

7.4% ABV

Standing Tide, our 7.4% IPA, is brewed with Pilsner, oats and wheat and hopped with Comet in the whirlpool, and then dry-hopped with Citra, Comet, El Dorado and Galaxy. ⁣ ⁣ These hops bring out flavors of zesty tangerine and grapefruit, with aromas of tropical fruit.⁣

This beer pushes of rich chocolate and vanilla from the bourbon barrel aging, supported by baked cinnamon rolls & creamy vanilla frosting.

This beer has notes of chocolate, vanilla, pumpkin pie spice, dried figs & carrot cake.

This Double Barrel-Aged Imperial Stout was aged in a blend of bourbon barrels for an average of 23 months, including Heaven Hill Old Fitzgerald Bourbon, Heaven Hill 8-Year Bourbon and Buffalo Trace Weller Wheated Bourbon, before being double barreled for an addition six months in a Cumaru cask from Brazil. This beer has notes of fresh baked apple pie à la mode & baked Alaska flambé supported by rich chocolate and vanilla from the prior bourbon barrel aging.

Bière de Noël | Winter 2024

Spontaneous

Bière de Nöel | Winter 2024, a Two-Year Spontaneous Blend, is available in 500mL bottles starting tomorrow. This festive beer began in 2020 as a single batch of traditional spontaneously fermented beer containing New Jersey blueberry blossom honey. A majority of this beer was racked to one of our Sangiovese wine foudres for 27 months, selected for its well-rounded and refreshing profile. Prior to bottling in March 2022, we selected a young spontaneously fermented beer that still contained a portion of fermentable sugar and blended it with the two-year-old spontaneous beer. The carbonation for this beer is entirely derived from the sugars present in the young beer. Bière de Nöel | Winter 2024 pours gold with aromatics of ripe peaches, fruit cups and a touch of honey supported by a bright but balanced acidity and a high minerality.

Bière de Noël | Winter 2021

Flemish-Style Red

Bière de Noël | Winter 2021 was brewed over two batches in the 18|19 season as an homage to some of our favorite specialty winter beers from the West Flanders region of Belgium. The beer was brewed using a turbid mash with a grist including some darker specialty grains and a long 9-hour boil to promote deep flavor development of plum and figs. Aged hops were used which brings a pleasant orange-citrus note. It was open fermented in our coolship before maturing in oak for 27 months. With an additional 10 months of bottling conditioning time, our first Bière de Noël has an age of 37 months upon release. Bière de Noël | Winter 2021 pours a mahogany color with highlights of burnt orange and a creamy brown head. It pushes bright aromatics of strawberry, raspberry and blackberry bramble along with supporting notes of vanilla, figs, dates and orange rind coupled with a hint of roasty chocolate and coffee complexity.
